Resumo: | This article is the result of a research whose goal was to understand the technology generation and diffusion process in the coffee agrifood chain in the five main producing regions in Brazil, especially its organizational arrangements and the coordination that defines these arrangements, and the technological history of each region. The potential of the internal and external demands, together with a higher consumer demands, opens new perspectives for production of special coffees that bring greater aggregated value along the chain and the need for coordinated action by the agents for improving the quality and variety of the end product. The institutional structure and organizational design of the coffee agrifood chain are key elements for the efficiency of the productive process in the exchanges and diffusion of innovations along the chain. The article discusses the concept of quality and its relationship with development. Quality is understood not only as an attribute of the drink or the coffee bean itself, but in a wider perspective, which valorizes and respects the current institutional parameters ¿ dignity and ethics ¿ as bases for development. |

A história e as experiências dos atores vão dar os contornos do aprendizado individual e coletivo, construído através das trocas. As competências são dinâmicas e específicas de cada cadeia produtiva. A potencialidade da demanda, associada ao crescimento do atributo qualidade, abre novas perspectivas para a produção de cafés especiais, o que implica a necessidade de uma ação coordenada dos agentes, que induza à difusão dos avanços tecnológicos ao longo da cadeia e à participação de todos os produtores.
