The development of gluten-free cassava croquet increased with the ora-pro-nobis: a new alternative for the celiac public and for the family agroindustry

Resumo: The poor eating habits have been triggering a progressive increase in individuals with chronic non-communicable diseases, allergies and food intolerances, including celiac disease. The study aimed to develop cassava croquet without gluten, added with ora-pro-nobis, adding nutritional value to the food and enabling a new alternative for the public of celiacs and family farms. To certify the acceptance of the product, nutritional composition and quality, sensory, chemical and microbiological analyzes were performed. For sensory analysis, croquet were prepared in fried and roasted form, and the fried one obtained superior acceptance and purchase intention. The bromatological analyzes of the fried croquet showed a lower fat and protein content than the conventional one, and the microbiological analyzes were adequate to the current legislation. It is concluded that the cassava croquet added with ora-pro-nobis is a potential product for the family farming and for the public of celiac.

O estudo teve por objetivo desenvolver uma coxinha de mandioca sem glúten, acrescida com ora-pro-nóbis, agregando valor nutricional ao alimento, e possibilitando uma nova alternativa para o público de celíacos e às agroindústrias familiares. Para atestar a aceitação do produto, composição nutricional e qualidade foram realizadas as análises sensoriais, bromatológicas e microbiológicas. Para análise sensorial elaborou-se as coxinhas na forma frita e assada, sendo que a frita obteve aceitação e intenção de compra superior. As análises bromatológicas da coxinha frita demonstraram teor de gordura e proteínas inferior à convencional, e as análises microbiológicas mostraram-se adequadas à legislação vigente.
