This article has as an objective to understand the dietary habits of the cattle convoy herders in the Brazilian colony in the 18th century, so that we can have a better understanding of the more elaborate social and economic dynamics that enveloped this diet. For this we will work firstly on the concept of alimentation and it’s relevance for the modern historiography, the emergency of this subject has already been brought up by other authors, that assert the lack of productions of this genre, like Carlos Alberto Dória and Ulpiano Bezerra de Meneses. Then, we will study the historical context of these southern cattle herders “Tropeiros”, elaborating a concise historical narrative that, lastly, will help us build a traditional culinary habit that we know today, utilizing for that the renowned author on the theme and great modern researchers, and also briefly analyzing a painting of the widely known painter Benedito Calixto that shows perfectly the situation we aim to portray on this article
