Trends and demands in the solid-liquid equilibrium of lipidic mixtures

Resumo: The production of fats and oils has a remarkable impact on economy, in particular, in the developing countries. To deal with the upcoming demands of the oil chemistry industry, studying the solid-liquid equilibrium of fats and oils is highly relevant because it may support the development of new processes and products, as well as improve existing processes and products. However, this task is challenging because lipidic compounds present multiple solid phases leading to behaviors that deserve special attention. The high complexity of these systems requires significant effort in the experimental investigation and theoretical description of their phase behavior. This work addresses perspectives to better understand and overcome some of these concerns.
