Universidade de LisboaThe valorisation of waste and agro-industrial residues constitutes a challenge for economically sustainable and environmentally friendly industrial processes. Olive pomace is a by-product generated in large amounts as a result of olive oil extraction. These solid residues are mostly lignocellulosic materials. The present study aimed to evaluate the potential use of extracted olive pomaces from olives with different ripening indexes (RI) and from different cultivars, namely Cobrançosa (RI: 2.51; 3.34 and 4.66) and Galega Vulgar cultivars (RI: 1.85; 2.89 and 4.82)), as source of antioxidant phenolic extracts and to produce oligosaccharides with prebiotic activity. The residual olive pomaces were dried and extracted in a Soxhlet system successively with n-hexane (6 h), ethanol (16 h) and water (16 h). Bioactive compounds were quantified in ethanol and water extracts. Galega olive pomaces presented a higher total extractives value (69.35%), oil yield (30.86%), bioactive compounds and a higher antioxidant capacity on ethanol extracts, when compared with Cobrançosa olive pomaces (57.88% total extractives and 25.82% oil). Cobrançosa pomaces’ structural components (14.47% lignin and 22.05% polysaccharides) were higher than in Galega pomaces (10.59% lignin and 13.49% polysaccharides). A hydrothermal pretreatment (autohydrolysis) was carried out following a central composite rotatable design (CCRD), as a function of temperature (T: 142-198°C) and time (t: 48-132 min). R0 equal or higher than 4.18 produced high sugar yields. Autohydrolysis conditions of 198ºC/90min generated the highest sugar yield (178.3 g/ kg dry pomace for COB-1 and 177.8 g/kg dry pomace for GAL-2), and thus the highest oligosaccharides yield (53.50% for COB 1 and 47.14% for GAL 2). Xylose, arabinose, and glucose were the main monosaccharides obtained by the previous optimized autohydrolysis condition, leading to the formation of mainly xylooligosaccharides. The production of oligosaccharides with prebiotic activity from olive pomaces showed to vary with olive cultivar and with hydrothermal conditions.
