The continuous emission of gases due to human activities, produced by combustion of oil products, by destruction of forests, seems, according to the Intergovernmental Panel for Climate Change (IPCC), to be the cause of a real disaster on our planet. In the last two centuries, there has been an increase in the average temperature, of about 0,85 ºC. The visible effects on the ecosystem that surrounds us affects plants’ physiology. High temperatures are also directly correlated with light radiation that induces the plant to grow and to produce fruits, in the case of the grapevine, with a higher sugar content than local historians, due to photosynthetic activity or dehydration that concern it. From an oenological point of view, excessive sugar content has direct repercussions, at the time of vinification, on the volumetric ratio of ethanol in the post-fermentative hydroalcoholic matrix. Such concentrations of ethanol can compromise wine quality and the health of consumers. Scientists are looking for an effective and sustainable solution. In the vineyard, the panorama of the proposed solutions includes the use of synthetic material to obtain a shading effect. The main objective is to reduce carbohydrate synthesis, in particular, formation of glucose through the biological process of photosynthesis. The leaves that do not receive an adequate amount of light during the formation phase, tend to vary their photosynthetic response, keeping the maximum photosynthetic capacity at relatively low light intensities, in the range of 300-350 μmol of photons m-2 s-1 . Therefore, the research carried out at the company Monchiero Carbone, in Canale, in the province of Cuneo, Italy, using the cv Nebbiolo aims to highlight the shading effects, using two hail nets with different shading effects (50% and 70%). Results revealed significant effects on berry morphology and accumulation of primary and secondary metabolites. Shadowing influenced the temporal change of the plant's metabolism, being justified in the technique, with the possibility of obtaining valid scenarios for new vinifications.
