Mel do Parque Natural do Montesinho: Caracterização e avaliação da contaminação em hidrocarbonetos aromáticos policíclicos

Resumo: | Honey is a prized and nutritionally rich natural product with numerous health advantages, driving high demand consumers. However, it faces significant challenges arising from climate change, environmental hazards, and quality concerns. In response, efforts are being undertaken by authorities, beekeepers, and researchers to confront these issues and safeguard the authenticity, quality, and sustainability of honey production. Aiming to study honey as a potential bioindicator for environmental quality, this work was conducted as part of the Honey+ project, led by a multidisciplinary team that seeks to enhance the value of honey produced in the Natural Park of Montesinho (NPM). Specifically, this dissertation seeks to characterize honey produced in NPM and evaluate the impact of polycyclic aromatic hydrocarbons (PAHs), a ubiquitous class of environmental pollutants, on honey’s quality. A total of 22 honey samples, 9 from NPM, were collected and a comprehensive set of physicochemical analyses was conducted, namely moisture and ash content, free acidity, hydroxymethylfurfural (HMF), color, electrical conductivity, pH, and diastase activity. Furthermore, the protein and mineral content of the honey samples was also determined. Some of these parameters must adhere to specified quantification limits for honey to be considered safe for consumption. According to the results of the quality study performed, the NPM honey samples generally have lower moisture and free acidity levels and presented higher ash content and diastase activity compared to honey samples collected from different regions of Portugal. From this characterization, it was concluded that all samples meet all parameters within legal limits. In what concern to ash content, honey samples from NPM exceed the maximum expected according to literature which could signify the presence of high levels of minerals in the honey composition. The mineral analysis allowed us to conclude that honey from NPM contains high amounts of manganese, cadmium, magnesium, and rubidium. The research also included the analysis of the total content of PAHs in honey samples produced in NPM, as well as in some honeycombs from which the honey samples were extracted. Additionally, honey samples collected from producers of other Portuguese regions were used for comparison. It was concluded that samples H2 and H5 had benz(a)anthracene, which is the legislated PAH for some foods. It is known that the origin of PAHs could be attributed to traffic pollution and/or proximity to agricultural fields. It is advisable to conduct additional PAH analyses on various types of honey, including Protected Designation of Origin (PDO) honeys. This would provide a more comprehensive understanding of the connection between environmental quality and honey quality. Furthermore, it is recommended to expand research efforts to encompass the analysis of vegetation, air, and water within the NPM to pinpoint the sources of PAHs. These investigations are aimed at unveiling the intricate relationships between environmental quality, local flora and fauna, and regional food products, thereby contributing to the preservation of ecosystems and ensuring food safety. Insights into the origins of PAHs can also aid in the development of mitigation strategies, ultimately guaranteeing the safety and quality of products originating from the NPM. |

No entanto, ele enfrenta desafios significativos decorrentes das mudanças climáticas, riscos ambientais e preocupações com a qualidade. Em resposta a isso, esforços estão sendo empreendidos por autoridades, apicultores e pesquisadores para enfrentar essas questões e garantir a autenticidade, qualidade e sustentabilidade da produção de mel. Com o objetivo de estudar o mel como um potencial bioindicador da qualidade ambiental, este trabalho foi realizado como parte do projeto Honey+, liderado por uma equipe multidisciplinar que busca valorizar o mel produzido no Parque Natural de Montesinho (PNM). Especificamente, esta dissertação busca caracterizar o mel produzido no PNM e avaliar o impacto dos hidrocarbonetos policíclicos aromáticos (HPAs), uma classe ubíqua de poluentes ambientais, na qualidade do mel. Um total de 22 amostras de mel, sendo 9 do PNM, foram coletadas e uma ampla variedade de análises físico-químicas foi realizada, incluindo teor de humidade e cinzas, acidez livre, hidroximetilfurfural (HMF), cor, condutividade elétrica, pH e atividade diastásica. Além disso, o teor de proteínas e minerais das amostras de mel também foi determinado. Alguns desses parâmetros devem estar dentro de limites específicos para que o mel seja considerado seguro para consumo. De acordo com os resultados do estudo de qualidade realizado, as amostras de mel do PNM geralmente apresentam teores mais baixos de humidade e acidez livre e apresentaram teor mais elevado de cinzas e atividade diastásica em comparação com amostras de mel coletadas em diferentes regiões de Portugal. A partir dessa caracterização, concluiu-se que todas as amostras atendem a todos os parâmetros dentro dos limites legais. No que diz respeito ao teor de cinzas, as amostras de mel do PNM excedem o máximo esperado de acordo com a literatura, o que poderia indicar a presença de altos níveis de minerais na composição do mel. A análise mineral permitiu concluir que o mel do PNM contém quantidades elevadas de manganês, cádmio, magnésio e rubídio. A pesquisa também incluiu a análise do teor total de HPAs em amostras de mel produzidas no PNM, bem como em algumas colmeias das quais as amostras de mel foram extraídas. Além disso, amostras de mel coletadas de produtores de outras regiões de Portugal foram usadas para comparação. Concluiu-se que as amostras H2 e H5 continham benzo(a)antraceno, que é o HPA regulamentado para alguns alimentos. Sabe-se que a origem dos HPAs pode ser atribuída à poluição do tráfego e/ou à proximidade de campos agrícolas. Recomenda-se a realização de análises adicionais de HPAs em vários tipos de mel, incluindo os méis com Denominação de Origem Protegida (DOP). Isso proporcionaria uma compreensão mais abrangente da ligação entre a qualidade ambiental e a qualidade do mel. Além disso, recomenda-se expandir os esforços de pesquisa para abranger a análise da vegetação, ar e água dentro do PNM para identificar as fontes de HPAs. Essas investigações visam desvendar as complexas relações entre a qualidade ambiental, a flora e fauna locais e os produtos alimentícios regionais, contribuindo assim para a preservação dos ecossistemas e garantia da segurança alimentar.
