Universidade do PortoToxic metals are among the most serious pollutants for both plants and humans, in fact they can determine several and very serious problems in both organisms. A too high content of toxic metals could affect vineyards and wines in different ways, even though, in both cases, their presence generates several diseases. In soil, where only a small fraction of the total metal content, the exchangeable one, is actually available for the plant, they show their toxicity effects on soil microorganisms, by generating a hostile environment for them and decreasing them. Soil pH, root exudates and soil structure could influence the mobility and bioavailability of metals. The absorption of a too high content of toxic metals by the plant could cause a reduced growth, also enzyme activity, photosynthesis, respiration, N-metabolism are inhibited. Toxic metals content in grapevine later manifests itself in wines, affecting them at turbidity, oxidative and reductive level. The presence of toxic metals determines phenomena as the iron and copper casses, the tartaric precipitation with K and Ca, the oxidative process of phenols and ethanol mediated by Fe or Cu, the increase of the reductive sulfur compounds. There are different strategies, agronomical and enological, to obtain an acceptable content of toxic metals. The agronomical practices able to reduce the metals content are based on two concepts, the phytostabilization, by changing the soil pH and influencing the metals mobility, by the addition of lime, slags or organic fertilizers, and the phytoextraction, by sequestrating metals from soil, exploiting hyperaccumulators, organic or not-organic acids or microorgansims.
