Resumo: | Tourist routes offer visitors the possibility to get to know a certain territory and get involved in activities and experiences organised around a common theme. The creation of these itineraries is a valuable tool for the promotion of territories, which had led several municipalities and regions in Portugal to acknowledge its importance. This paper will focus on gastronomic routes, whose main goal is the promotion of local gastronomy and endogenous products from of a given territory. The starting point for this investigation was a survey of food products issued with Protected Designation of Origin (PDO), Protected Geographical Indication (PGI) or Traditional Speciality Guaranteed (TSG) certifications, associated with the Central region of Portugal. These traditional certified products are key elements for the development of tourism, as tourists are increasingly looking for higher quality products, healthy eating and activities that encourage sustainability. In this sense, the combination of tourist routes and gastronomic products seems to be an experience with high growth potential. The objective of this work is to identify existing tourist routes, which have as their theme one or more certified food products. The focus of the study is the Central region of Portugal. |

The focus of the study is the Central region of Portugal.As rotas turísticas permitem aos visitantes conhecer um determinado território e envolver-se em atividades e experiências subordinadas a um tema comum. A criação destes itinerários é uma importante ferramenta de dinamização dos territórios e tem sido uma forte aposta por parte de vários concelhos e regiões em Portugal. Neste artigo será dado destaque às rotas gastronómicas, cujo principal objetivo é a promoção da gastronomia local e dos produtos endógenos característicos de um determinado território.O ponto de partida para esta investigação foi a pesquisa de produtos alimentares certificados com Denominação de Origem Protegida (DOP), Indicação Geográfica Protegida (IGP) ou Especialidade Tradicional Garantida (ETG), associados à região em estudo, neste caso a região Centro de Portugal. Estes produtos tradicionais certificados são elementos-chave para o desenvolvimento da atividade turística, pois os turistas são cada vez mais exigentes, procuram produtos de maior qualidade, uma alimentação saudável e atividades que estimulem a sustentabilidade. Nesse sentido, a combinação entre rotas turísticas e produtos gastronómicos parece ser uma experiência com elevado potencial de crescimento. O objetivo deste trabalho passa pela identificação de rotas turísticas existentes, que tenham como tema um ou mais produtos alimentares certificados.
