The present work aims to approach this challenge through new strategies, in this case, to produce a biofilm incorporating Pickering emulsions that contain curcumin. The polymer of the particles that stabilize the emulsion and the biopolymer that compose the film will be the same, in this case, the cellulose. The Pickering emulsion will be an emulsion oil in water (O/W), and the great difficulty is to find a stable formulation. For that, a Design of experiments (DoE) was used to inspect how the variables behaved in the process, and so it was seeking the optimization until the stable final formulation. The use of the high-pressure homogenizer was essential. It was used in the process of dispersion of the cellulose and in the preparation of the emulsion to reduce the droplets in the search for stability. The films were produced by the casting method. A stable 10/90 O/W emulsion containing a 3% cellulose and 0.5% of curcumin was incorporated into the film-forming dispersion containing 10% of cellulose to prepare the films. The characterization of the films was conducted according to their physical-chemical properties, analyzing the coloration, the transparency through UV-Vis analysis, and physicochemical, functional groups identification by FTIR. After some difficulties during the process it was possible to reach the objective of the work.Há uma grande dificuldade em incorporar compostos hidrofóbicos em filmes de base hidrófila, assim cada vez se buscam novas técnicas de incorporação, no qual podem ser aplicados na indústria de alimentos. O presente trabalho tem como objetivo abordar este desafio através de novas estratégias, em este caso, produzir um biofilme incorporando emulsões Pickering que contenham curcumina. O polímero usado para formar partículas que estabilizaram a emulsão e o biopolimero que compõe o filme é o mesmo, neste caso a Celulose. A emulsão Pickering é uma emulsão óleo em água (O/W) sendo que a grande dificuldade é conseguir encontrar uma formulação estável. Assim, o método de Planejamento de Experimentos foi utilizado para descobrir como as variáveis se comportavam no processo e assim otimizar a formulação para obter uma emulsão final estável. A utilização do homogeneizador de alta pressão foi essencial, tendo sido utilizada no processo de dispersão da celulose e na preparação da emulsão com o objetivo de diminuir as microfibrilas e gotículas, respetivamente. Os filmes foram produzidos pelo método de casting. Para formar os filmes a emulsão estável 10/90 de O/W contendo 3% de celulose e 0,5% de curcumina foi incorporada numa solução formadora do filme contendo de 10% de celulose. A caracterização dos filmes foi realizada de acordo com suas propriedades físico-químicas, analisando a coloração, a transparência através da análise UV-Vis, e a identificação físico-química e de grupos funcionais pelo FTIR.
