Resumo: Olive oil is a widely used product, mainly in cooking, being part of the Mediterranean culture, namely the Portuguese. ln this work, the process, from the culture of the olive tree, to the production of olive oil is characterised and the olive oil production market is analysed, at a national level, being disaggregated, essentially, by virgin olive oil type (based upon the quality) and by regions. Supercritical fluid extraction is a innovative process which allows the extraction, using an "ecological" method, of components from natural products, which can be applied to the refining of olive oil. An industrial unit scale-up study to this refining process, together with an economic feasibility study, allows to reach the conclusion that this process is, according to this analysis, feasible.

Dans cet article on caractérise le processus dês la culture de l'olivier jusqu'à la production de l'huile d'olive. On analyse le marché de la production de l'huile d'olive à l 'échelle nationale, en faisant la désagrégation, essentiellement, par le type de l 'huile vierge (basé sur la qualité) et par les régions. L'extraction supercritique est un procédé innovateur qui peut être appliqué au raffinage de l'huile d'olive. Ce procédé permet de faire l'extraction de composants tirés de produits naturels tout en utilisant une méthode "écologique". Une étude de scale-up (dimensionnement) d'une unité industrielle objet de ce procédé de raffinage, accompagnée d'une autre étude de faisabilité économique, permet de conclure que ce procédé est, en premiere analyse, faisable.O azeite é um produto com larga utilização, principalmente na culinária, fazendo parte da cultura mediterrânica e, nomeadamente, da portuguesa. Neste trabalho caracteriza-se o processo que vai desde a cultura da oliveira até à produção do azeite e analisa-se o mercado de produção de azeite, a nível nacional, sendo feita a desagregação, essencialmente, por tipo de azeite virgem (no que diz respeito à sua qualidade) e por regiões. A extracção supercrítica é um processo inovador que permite a extracção, através de um método "ecológico", de componentes a partir de produtos naturais, aplicável à refinação de azeite.
