Physicochemical analysis of colostrum breast milk donated in the lactation room of the Educational Medical Unit of an Argentine public university

Resumo: This study aimed to determine the composition of proteins, fats, and, the lipid profile of donated breast milk in the lactation unit of the Educational Medical Unit of the National University of Chaco Austral. To achieve this, breast milk from selected mothers was analyzed, which was collected between 1 to 3 days postpartum. The protein content, total fat, and lipid profile were determined using standardized techniques, to verify if there are variations in their composition. The minimum and maximum protein values were 2.37 ± 0.32 and 3.46 ± 0.86, and for total fat 4.50 ± 0.33 and 6.20 ± 0.86 g / 100 ml, being the main fatty acids myristic, palmitic, stearic, oleic, and linoleic. Although it is an initial study, the nutritional composition of the samples coincides with that reported in the bibliography, highlighting the content of fatty acids detected.

Para lograr este se analizó la leche materna proveniente de madres seleccionadas, que se recolectó entre los 1 a 3 días posparto. Se determinó el contenido proteico, grasa total, y perfil lipídico mediante técnicas estandarizadas, para determinar si existen variaciones en su composición.  Los valores mínimos y máximos de proteínas fueron de 2,37 ± 0,32 y 3,46 ± 0,86, y de grasas totales 4,50 ± 0,33 y 6,20 ± 0,86 g/100 ml, siendo los ácidos grasos mayoritarios el mirístico, palmítico, esteárico, oleico y linoleico. Si bien es un estudio inicial, la composición nutricional de las muestras coincide con lo reportado en la bibliografía, destacándose los contenidos de ácidos grasos detectados.Este estudo teve como objetivo determinar a composição de proteínas, gorduras e o perfil lipídico do leite materno doado na unidade de lactação da Unidade Médica Educacional da Universidade Nacional do Chaco Austral. Para tanto, foi analisado o leite materno de mães selecionadas, que foi coletado entre 1 a 3 dias pós-parto. O teor de proteína, gordura total e perfil lipídico foram determinados por meio de técnicas padronizadas, para verificar se há variações em sua composição. Os valores mínimos e máximos de proteína foram 2,37 ± 0,32 e 3,46 ± 0,86, e para gordura total 4,50 ± 0,33 e 6,20 ± 0,86 g/100 ml, sendo os principais ácidos graxos mirístico, palmítico, esteárico, oleico e linoleico.
