E-mail: kelly.keller@yahoo.com.br Two hundred of Apis mellifera honey samples were grouped according to the presence of inspection seal, in order to assess their quality and to determine the physicochemical characteristics as indicators of honey quality (5-hydroxymethylfurfural-HMF, moisture and acidity). The honey samples were purchased in the state of Rio de Janeiro over two years. The samples acquired were majorly untagged, and most honey samples were in conformity with the Brazilian Legislation. It is noteworthy that the determination of free acidity out of the limits of the honey criteria comprised 14% of samples, and especially covered the samples without seal. The resulted of HMF showed wide variation, the majority of samples fulfill the limits authorized by legislation, and the smaller values came from the samples with seal. The honey label in accordance with health and safety legislation, which has the seal, proves to be crucial for quality assurance. No less important is to maintain surveillance in the beekeeping in order to reduce the informal products in the market.

No less important is to maintain surveillance in the beekeeping in order to reduce the informal products in the market.De acordo com a presença do selo da inspeção animal, agruparam-se duzentas amostras de mel de Apis mellifera para avaliar a qualidade deste produto e determinar as características físico-químicas como indicadores de qualidade (5-hidroximetilfurfural-HMF, umidade e acidez livre). As amostras de mel foram adquiridas no estado do Rio de Janeiro ao longo de dois anos. Houve domínio de produtos informais e os resultados obtidos indicam que a maioria das amostras analisadas manteve suas características em conformidade com os limites estabelecidos pela Legislação Brasileira. A determinação de acidez livre é a que mais se acentua fora dos padrões legais, com 14 das amostras reprovadas, principalmente daquelas sem selo. O resultado de HMF mostrou larga variação e a maioria das amostras atende os limites estabelecidos pela legislação, os valores mais baixos recaem sobre as amostras inspecionadas. As marcas de mel que exibem selo e que seguem os critérios da legislação destacam o valor do serviço de inspeção animal para assegurar a sua qualidade.
