E-mail: [e-mail] The incidence of fungi on eggs was evaluated, according to the integrity of the shell, packaging and storage time. We used 320 white eggs collected from the same batch of hens at four different dates, separated by a fortnight from August 22, 2006. Each round of 80 eggs was selected half with fissured bark and half with intact shells from which sequentially divided in half for storing opened packages and containers lined with plastic film, which was divided into equal amounts for assessments in the first and 14th day of storage, after opening in laminar flow. On the surface of the shells were passed Swab and then smears done in culture medium Potato Dextrose Agar. Later were placed in an oven at 25°C for seven days for quantification of CFU. Was no significant effect (P <0.05) the integrity of shell on the incidence of fungi, with a history of UFC on bark with microcracks. Was no significant effect (P <0.05) of packaging material on the incidence of fungi, with greater presence of eggs in open containers compared to the sealed There was an interaction between type of packaging and storage time with a significant bearing on opened packages only 14 days of storage.
