E-mail: fraga@ufrrj.br The incidence of fungi on eggs was evaluated, according to the integrity of the shell, packaging and storage time. We used 320 white eggs collected from the same batch of hens at four different dates, separated by a fortnight from August 22, 2006. Each round of 80 eggs was selected half with fissured bark and half with intact shells from which sequentially divided in half for storing opened packages and containers lined with plastic film, which was divided into equal amounts for assessments in the first and 14th day of storage, after opening in laminar flow. On the surface of the shells were passed Swab and then smears done in culture medium Potato Dextrose Agar. Later were placed in an oven at 25°C for seven days for quantification of CFU. Was no significant effect (P <0.05) the integrity of shell on the incidence of fungi, with a history of UFC on bark with microcracks. Was no significant effect (P <0.05) of packaging material on the incidence of fungi, with greater presence of eggs in open containers compared to the sealed There was an interaction between type of packaging and storage time with a significant bearing on opened packages only 14 days of storage. It was concluded that the direct relationship of shell quality with the development of fungi on the surface of the lens can be reduced, with the coating of plastic film packaging, Providence all the more so for longer the period of storage of eggs.

Foram utilizados 320 ovos brancos, colhidos do mesmo lote de poedeiras leves em quatro diferentes datas, separadas por quinzenas, a partir de 22/08/2006. De cada partida de 80 ovos, selecionou-se a metade com cascas fissuradas e a outra metade com cascas íntegras a partir das quais, sequencialmente, dividiu-se, metade para acondicionamento em embalagens abertas e o restante em embalagens revestidas com filme plástico, e ambas foram divididas em quantidades iguais, para avaliações no primeiro e 14º dias de armazenamento, após a abertura em fluxo laminar. Sobre a superfície das cascas foram passados zaragatoas e, em seguida, feitos esfregaços em meio de cultura Agar Batata Dextrose. Posteriormente foram acondicionadas em estufa a 25° C, durante sete dias, para quantificação das Unidades Formadoras de Colônias (UFC). Observou-se efeito significativo (P<0,05) da integridade de casca sobre a incidência de fungos, com maior presença de UFC sobre cascas com microfissuras. Outro efeito significativo ocorreu, (P<0,05) do tipo de embalagem sobre a incidência de fungos, com maior presença sobre ovos em embalagens abertas, em comparação às embalagens fechadas. Houve interação entre tipo de embalagem e tempo de armazenamento com incidência significativa nas embalagens abertas apenas no 14º dia de armazenamento.
