Resumo: | This experiment was carried out in order to determine physical injuries caused by artificial drying of corn kernels using drying air temperatures of 40oC, 70oC and 100oC) and harvested at moisture contents of 18%, 25% and 35% and to correlate them to breakage susceptibility. A stationary fixed bed drier with an air flow of 15 m3/min/ m2 was used. Lots of 1,400 kg, using three replications, were dried for each combination of harvest moisture content and drying temperature level. Hectoliter weight, 1,000-kernels weight, percentage of kernels with one, two and multiple cracks, stress cracks index and breakage susceptibility were evaluated. Stress cracks index of corn kernels increases when harvest moisture and driyng temperature increase in a stationary fixed bed drier. Occurrence of broken kernels during pre processing is affected by stress cracks severity. Stress cracks index and percentage of kernels with multiple cracks are fairly correlated to breakage susceptibility. |

Stress cracks index and percentage of kernels with multiple cracks are fairly correlated to breakage susceptibility.Esse trabalho foi conduzido para determinar danos físicos causados pela secagem artificial de grãos de milho, empregando temperaturas de secagem de 40oC, 70oC e 100oC, e colheita com graus de umidade de 18%, 25% e 35% e correlacionar esses danos com suscetibilidade à quebra de grãos. Foi usado secador estacionário de leito fixo com vazão de ar de 15 m3/min/m2. Em cada combinação de grau umidade de colheita e de temperatura de secagem foram secados lotes de 1.400 kg, utilizando três repetições. Foram avaliados peso hectolítrico, peso de mil grãos, percentagem de grãos trincados com uma, duas e múltiplas fissuras, índice de fissuras e suscetibilidade à quebra. O índice de fissuras de grãos de milho aumenta com a elevação da umidade de colheita e da temperatura de secagem em secador de leito fixo. A incidência de grãos fragmentados no pré-processamento é influenciada pela severidade do trincamento. Índice de fissuras e incidência de grãos com múltiplas fissuras são estreitamente correlacionadas com suscetibilidade a quebras. Departamento de Diagnóstico e Pesquisa Agropecuária.
