Postharvest evaluation of apples cv. Fuji coated with chitosan solution from filmogenic

Resumo: The covers can be used on fruits and vegetables in natura, because modifying the atmosphere around those avoiding physical and chemical changes. Thus, the present study aimed to evaluate the effect of filmogenic solution based on chitosan conservation at different times and temperatures of apples cv. Fuji. In addition to assessments rot incidence and qualitative changes the deposition surface was visualized in electron micrographs (SEM). The apples were coated with the solution in concentrations of 1 and 2%. Shortly after treatment, the apples were stored 0°C or 20°C for 5, 10 or 15 days plus two days to simulate commercialization. The use of filmogenic solution in apples stored at 0 °C maintained quality of apples regardless of concentration. Concentrations were effective in reducing weight loss and decay incidence. Apples coated with 2% solution showed better appearance providing more brightness in the fruit and maintaining ascorbic acid, acidity, the red color and soluble solids. The chitosan formed a protective layer homogeneous apples which was confirmed through electron micrographs.

Assim, o presente trabalho objetivou avaliar o efeito de solução filmogênica à base de quitosana na conservação em diferentes tempos e temperaturas de maçãs cv. Fuji. Além de avaliações de incidência de podridões e alterações qualitativas, a deposição na superfície foi visualizada em eletromicrografias de varredura (MEV). As maçãs foram recobertas com solução nas concentrações de 1 e 2%. Logo após o tratamento, as maçãs foram armazenadas a 0oC e 20oC por 5, 10 e15 dias acrescidos de mais três dias para simulação de comercialização. O uso da solução filmogênica em maçãs armazenadas a 0oC manteve a qualidade das maçãs, independente da concentração. A solução de quitosana, nas duas concentrações testadas, foram efetivas na redução da perda de massa fresca e da incidência de podridões. As maçãs recobertas com solução a 2 % apresentaram melhor aparência provendo mais brilho no fruto e mantendo o teor de ácido ascórbico, a acidez titulável, a cor vermelha e teores de sólidos solúveis. A aplicação de quitosana formou uma camada protetora homogênea nas maçãs o que foi constatada através das eletromicrografias.Departamento de Diagnóstico e Pesquisa Agropecuária.
