Resumo: this paper presents potentiometry as an analytical technique for iron (ii) chelating ability of essential oils. in these experiments five essential Mentha oils were tested: Mentha spicata L., Mentha x genfilis L., Mentha crispa L., Mentha piperita l. and Mentha x piperita l. the strategy of this method consist to follow the open-circuit potential shift involving the fe2+Fe3+ equilibrium on the platinum electrode surface, after one drop of essential oil addition. the open- circuit potential shifts promptly to more positive potential values suggesting a strong chelating ability of the essential oils. this effect is predictable by nernst equation by withdrawing of the fe(ii) species from the fe2+/Fe3+ equilibrium. it was demonstrated that the chelating reaction is first order regarding to fe(ii) species. each essential oil has a different reaction velocity constant, however it was noticeable the constant value of mentha x gentiles.
