Resumo: | This work shows chemical evidences of the influence of the cassava root species on the production of glucose after acid hydrolysis. This conclusion was taken from data where different cassava roots species were submitted to acid hydrolysis and showed different amount of glucose despite of the fact that some species came from the same local of Rio Grande do Sul. The best results were observed with the “branca” species where 100 g of the root produced 26.4 g of glucose. |

O presente trabalho apresenta evidências da influência das características intrínsecas de cada acesso de mandioca sobre o teor de glicose gerado após a hidrólise ácida dos mesmos. O procedimento mostrou que acessos vindos da mesma região apresentavam teores de glicose diferentes, apesar de estarem sujeitas ao mesmo clima e solo. Os melhores resultados foram obtidos com o acesso de mandioca “branca” onde a hidrólise ácida de 100 gra- mas da raiz produziu 26,4 gramas de glicose.Departamento de Diagnóstico e Pesquisa Agropecuária.
