Information technology in restaurant management: a systematic review

Resumo: | Business management was transformed by information technology, and nowadays, besides being a competitive advantage, it is essential in food businesses. This paper aims to build an overview of the restaurant industry, and its management processes, and the use of information technology (IT). Therefore, a systematic literature review was conducted, analyzing articles published in English until the year 2020, available in 5 digital databases. Publications since 1980 were identified and selected, revealing that the use of information technology in restaurant management accompanied the maturation of technology, and resulted in concerns like necessity of investment in hardware and software, organizational culture, IT adequacy to different types of service, the role of leadership in the implementation, even the use of cutting edge technology for inventory management. Thus, this study offers an overview, and presents advances and benefits of the use of information technologies in restaurant management, as well as clarify that this subject can be deeply explored, especially considering local particularities, which directly influence access and ways of IT usage. |

O objetivo deste estudo é construir um panorama que relacione os negócios de alimentação, e seus processos de gestão, com uso de tecnologia da informação (TI). Para isso, foi conduzida uma revisão sistemática da literatura, analisando artigos publicados em inglês até o ano de 2020, disponíveis em 5 bases de dados digitais. Desta forma, foram identificadas e selecionadas publicações a partir de 1980, que revelam que o uso de tecnologia de informação na gestão de restaurantes acompanhou o amadurecimento da tecnologia, e resultou em preocupações desde a necessidade de investimento em equipamentos, cultura organizacional, adequação de TI aos diferentes tipos de serviço, papel da liderança na implantação, até uso de tecnologia de ponta para gestão de estoque.
