Resumo: This paper aims to complement usual methods for coffee quality determination. The relation between electrical conductivity of coffee grains and its quality was studied. The methodology for evaluation of electrical conductivity was developed at the Seed Laboratory of the Escola Superior de Agricultura "Luiz de Queiroz" (ESALQ-USP, Piracicaba-SP). Was recommended the use of 4 samples of 50 grains of coffee, weighed and immersed on 75ml of destilled water (in 180ml plastic glasses). Temperature was kept on 25°C for 3.5 hours, followed by shaking. The determination in electrical conductivimeter was expressed in uS/g/sample. The results showed that potassium was the most leached ion by coffee grains. The evolution of electrical conductivity follows the water absorption and potassium leaching.

The evolution of electrical conductivity follows the water absorption and potassium leaching.   Com o objetivo de ampliar os procedimentos usuais para determinação da qualidade do café, estudou-se a relação entre a condutividade elétrica do exsudato de grãos de café e sua qualidade. A metodologia para avaliação da condutividade elétrica foi desenvolvida no Laboratório de Sementes do Departamento de Agricultura da Escola Superior de Agricultura "Luiz de Queiroz" em Piracicaba-SP; podendo-se recomendar a utilização de quatro amostras de 50 grãos de café, pesadas, imersas em 75ml de água destilada (no interior de copos de plástico de 180ml de capacidade) colocadas em ambiente a 25°C por 3,5 horas, seguida de agitação e leitura em condutivimetro elétrico, expressando os resultados em uS/g/amostra. Os resultados indicaram que o ion lixiviado em maior quantidade pelos grãos de café foi o potássio que se correlacionou diretamente r2=99% com a condutividade elétrica.
