Corn: risk associated with contamination by F. Verticillioides and fumonisins

Resumo: The corn (Zea mays L.) is the main culture of food productive chain with annual production of 583 million tons, where Brazil accounts with approximately 7% of total. Concerning the nutritional properties, the corn is attacked by several predadors, with emphasis on fumonisin producing Fusarium verticillioides Sacc. Niremberg (F. moniliforme Sheldon), which predominate in corn micoflora. The deleterious effects extend from field to consumption stage worldwide, affecting every corn exporter countries. The overcoming of losses requires the domain on basic knowledges about infection/mycotoxicology, for further adequate preventive directions. The importance of corn, with emphasis on the impact of F. verticillioides/fumonisin contamination in food safety is reviewed.

Niremberg (F. moniliforme Sheldon) produtor de fumonisina, por ser o integrante que predomina a micoflora. Os efeitos deletérios extende-se do campo ao consumo em vista a distribuição mundial, contaminando o milho nos principais países exportadores. Para contornar os prejuízos, o domínio sobre princípios básicos referentes a infecção/micotoxicologia é fundamental, visando direcionamento adequado de medidas preventivas.
