Evaluation of microbiology and nutritive quality of exotic meats

Resumo: Vacuum-packed and frozen of ostrich (Struthio camelus), alligator (Caiman latirostris) and wild boar (Sus scrofa) meat samples were obtained in an authorized commercial store in Maringá/Paraná. Of each kind meat were analyzed 6 samples, where were studied counts of mesophilic aerobic bacteria, aerobic bacteria psichrophilic, coliforms, Escherichia coli and Staphylococcus spp., and protein and fat analysis. The results of aerobic mesophilic bacteria ranged between <1.0 a 3.6 log CFU/g, being the biggest counting in ostrich meat. The meat that had the biggest counting of micro-organisms psychrotrophs was also the ostrich, but even so, it was not considered high, ranging between 2.3 and 2.7 log CFU/g. There were no counting for coliforms and E. coli on wild boar and alligator meats (except sample 4 of wild boar meat that had a count of 1.0 log CFU/g of coliforms) but, all ostrich meat had count, ranged between 1.3 a 2.7 log CFU/g. In generally, the literature shows that wild animals meats have higher protein values (19.5 to 22.8% CP) than domestic animals, this values agree with the values found in this work, 19.9 to 29.9% CP.

In generally, the literature shows that wild animals meats have higher protein values (19.5 to 22.8% CP) than domestic animals, this values agree with the values found in this work, 19.9 to 29.9% CP. Amostras embaladas a vácuo e congeladas de carne de avestruz (Struthio camelus), jacaré (Caiman latirostris) e javali (Sus scofra) foram obtidas em um estabelecimento autorizado para a venda no Município de Maringá/PR. Foram analisadas 6 amostras de cada tipo de carne, sendo realizadas as contagens de bactérias aeróbias mesófilas, bactérias aeróbias psicrófilas, coliformes, Escherichia. coli e Staphylococcus spp.; e análises de proteína e gordura. Os valores de bactérias aeróbias mesófilas variaram de <1,0 a 3,6 log UFC/g, sendo a maior contagem encontrada em carne de avestruz. A carne que apresentou maior contagem também para micro-organismos psicrotrófilos foi a de avestruz, porém, mesmo assim a contagem não foi considerada alta, variando entre 2,3 a 2,7 log UFC/g. Não houve contagem de coliformes e E. coli nas carnes de jacaré e javali (exceto amostra 4 de javali que houve contagem de 1,0 log UFC/g para coliformes), porém na carne de avestruz todas as amostras apresentaram contagem, variando de 1,3 a 2,7 log UFC/g. De forma geral, os dados da literatura mostram que em animais silvestres os valores de proteína são mais elevados do que em animais domésticos, sendo que em carnes de animais selvagens são descritos médias de proteína de 19,5 a 22,8%, valores esses de acordo com os encontrados nesse trabalho, que foram de 19,9 a 29,9%.
