Resumo: | Broccoli is an important vegetable due to its economic and nutritional value. It shows quick senescence, characterized by yellowing, loss of turgecency, development of off-odors, increase in enzymatic activity and loss of nutritional value. Among the techniques that can extend its shelf life, we have cooling and modified atmosphere packaging. There are some factors that interfere in the efficiency of MAP, influencing the speed and the intensity in the atmosphere modification. This work aimed to evaluate the influence of broccoli packed weight (bi-oriented polypropylene film) on its color, odor and enzymatic activity during its post harvest period when stored at 1ºC. Afterwards, a strong influence was verified when packing was used, for in all packaged treatments lower enzymatic activity was observed. It was also observed that, among package treatments, those with more filling weight showed the worst performance about odor, chlorophyll rage and enzymatic activity |

Embora possa ser minimamente processada, apresenta rápida senescência, caracterizada pelo amarelecimento das sépalas, perda de turgescência, desenvolvimento de odores desagradáveis, aumento na atividade enzimática e redução do valor nutricional. Dentre as técnicas que podem estender sua vida de prateleira, temos o uso de refrigeração e de embalagem com atmosfera modificada, sendo vários os fatores que interferem na eficiência da técnica de embalagem com atmosfera modificada, influenciando a velocidade das alterações na atmosfera bem como a intensidade das mesmas. O objetivo deste trabalho foi estudar a influência da quantidade de massa embalada de brócolis (filme polipropileno bi-orientado) em sua cor, aroma e atividade enzimática quando armazenado a 1oC. Ao final do experimento foi verificado que houve grande influência da utilização de embalagem em relação ao controle, sendo que para todos os tratamentos embalados foi constatado menor atividade enzimática da peroxidase.
