Hábitos alimentares e comportamento alimentar: do que estamos falando?

Resumo: At first, it is recorded that in the field of food and nutrition, eating habits" mostly relates to what one eats regularly. As an empirical category, devoid of concepting or questioning epistemological issues, it is used as common knowledge phrase in the academia, naturalized and studied through the characteristic methods of Simple Thought, as found in Edgar Morin s reflections, and for which there are no substantial questioning concerning its meanings in cultural, social and psychical context. It must be emphasized the significant amount of effort to be considered when one seeks approaching reflections on habit over time and in different knowledge fields. The complexity of the phenomena, as conceived by Morin, emphasizes the need to (re) connections among fields of science and his own spillovers to other areas of life among society. Among the many possibilities yet to be explored in the various scientific fields, it is indicated to follow on with Pierre Bourdieu through the concept of habitus as has been suggested by some authors and is being done also by others as one of the paths that can enrich analyzes. It is considered that when operating with concepts that allow taking into account the complexity that embodies the eating habits approach, the field of Food and Nutrition itself can keep on more energized and more autonomy in its scientific read. In the second phase, also observed that in the field of Food and Nutrition "eating behaviors" are predominantly perceived as controllable events and repetition changes "eating habits". The purpose is to understand the influence of this reductionist approach, highlighting some discussions about eating behaviors in light of Humanities, in order to distinguish it from eating habits. To discuss the simplified way this issue is addressed, it was sought elements on the paradigm of the complexity of Morin to understand the relationship between eating behaviors and eating habits, taking into account other strands of understanding coming from other fields of knowledge that are not reduced to simplistic logic of the traditional positivist science. From the perspective of complex thought, behavior moves from conditional action to an extension that comprises socio-cultural, subjective and individual, either conscious or unconscious dimensions, while the habit is something that makes sense in repetition for the individual. When the difference (in Deleuze s perspective) stands out in this repetition it could integrate change to existence of the subject

Tal como uma categoria empírica, desprovida de conceituação ou problematização de ordem epistemológica, corresponde a uma expressão do senso comum na academia, naturalizada e estudada a partir de procedimentos caraterísticos do Pensamento simplificador conforme se encontra nas reflexões de Edgar Morin e, para a qual não se identifica questionamentos mais substantivos sobre seus sentidos e significados no contexto cultural, social ou psíquico. Ressalta-se a significativa amplitude dos esforços a serem considerados quando se busca aproximação às reflexões sobre hábito ao longo dos tempos e em diferentes campos do conhecimento. A complexidade dos fenômenos, tal como concebida por Morin, enfatiza a necessidade de (re) ligações entre campos da ciência e de seu próprio transbordamento para outros espaços da vida em sociedade. Entre as muitas possibilidades a serem exploradas nos diversos campos científicos, indica-se seguir com Pierre Bourdieu, através do conceito de habitus como já foi sugerido por alguns autores e vem sendo realizado também por outros como uma das vias que podem enriquecer análises. Considera-se que ao operar com conceitos que possibilitam ter em conta a complexidade que marca a abordagem dos hábitos alimentares , o próprio campo da Alimentação e Nutrição poderá seguir mais fortalecido e com mais autonomia na sua lida científica. No segundo momento, observa-se que também no campo da Alimentação e Nutrição comportamentos alimentares são predominantemente percebidos como eventos controláveis e que sua repetição altera o hábito alimentar . Objetivando entender a influência dessa visão reducionista, destacam-se algumas discussões sobre os comportamentos alimentares à luz das Ciências Humanas, para estabelecer diferenciação em relação aos hábitos alimentares. Ao problematizar o modo simplificado como essa questão é abordada, busca-se no paradigma da complexidade de Morin elementos para entender a relação entre comportamentos e hábitos alimentares, considerando outras formas de entendimento oriundas de outros campos de saber que não se reduzem à lógica simplificadora da ciência positivista tradicional. Na perspectiva do pensamento complexo, o comportamento se desloca de ação condicionada para uma extensão que comporta a dimensão sociocultural, subjetiva e individual, consciente e inconsciente, enquanto o hábito se afirma como aquilo que na repetição faz sentido para o indivíduo.
