Resumo: The illnesses caused by contaminated food consumption have been a great problem of world wide health, warns the World Health Organization. Aquaculture is also involved in this problem, as the alerts are confirmed in such cases as antibiotic residues in cultivated shrimps and presence of salmonella in fish in the main markets. This situation contributed to the formation of a new class of consumers, much more demanding regarding the quality and origin of foods. This consumersâ position has forced the food companies to adopt a system of self-regulation to guarantee a safe product for the population. HACCP is the most wide spread system in place, nevertheless, for its functioning, it must be supported in requirements like Traceability. The Traceability System is a tool to guarantee the safety of food through the control of processes and inputs of the whole productive chain. Therefore, the present study has the objective of developing a Traceability System integrating the whole productive chain of the shrimp cultivated in the State of CearÃ-Brazil, for the purpose of increasing the commercial competitiveness of the industry, by means of the guarantee of cultivated shrimp safety.

A AqÃicultura tambÃm està envolvida nesta problemÃtica, com a confirmaÃÃo de alertas, nos principais mercados, de casos como resÃduos de antibiÃticos em camarÃes cultivados e presenÃa de salmonela em peixes. Essa situaÃÃo contribuiu para a formaÃÃo de uma nova classe de consumidores, muito mais exigentes quanto à qualidade e origem de seus alimentos. Essa postura dos consumidores tem forÃado as empresas de alimentos a adotarem sistemas de auto-controle para garantir um produto seguro para a populaÃÃo. O sistema HACCP à o mais difundido mundialmente, entretanto, para seu funcionamento ele deve estar apoiado em prÃ-requisitos como Rastreabilidade. O Sistema de Rastreabilidade à uma ferramenta para garantir a seguranÃa dos alimentos atravÃs do controle de processos e insumos dentro de toda cadeia produtiva.
