Resumo: The study investigates the dynamics and strategies articulated by the rural tourism structuring project in the region of the Serra Catarinense (SC), by the Associação de Agroturismo Acolhida na Colônia, in the search to reintroduce regional food prepartion practices and knowledge. The text is based on qualitative research focused on the collection and discursive analysis of reports produced by different media, selected and disseminated by the investigated association and results in the validation of the pertinence of the adoption of both the concept of invention of the traditions and the practices of agency of memory popular for the imaginary reconstruction of the food territory under study. Traditions.El estudio investiga dinámicas y estrategias articuladas por el proyecto de estructuración del turismo en ambiente rural en la región de las Encostas de la Sierra Catarinense (SC), por la Asociación de Agroturismo Acogida en la Colonia, en la búsqueda de reintroducir prácticas, saberes y hacer alimentos regionales. El texto deriva de una investigación cualitativa enfocada en la colecta y análisis discursivo de reportajes producidos por diferentes medios, seleccionados y divulgados por la asociación investigada y trae como resultado la validación de la pertinencia de la adopción tanto del concepto de invención de las tradiciones, como de las prácticas de agenciamiento de la memoria popular para la reconstrucción imaginaria del territorio alimentario en estudio. Palabras clave: Comida regional; Territorios Alimenticios; Tradiciones.L'étude examine les dynamiques et les stratégies articulées par le projet de structuration du tourisme dans un environnement d'agriculture familiale rurale dans la région d'Encostas da Serra Catarinense (SC), par l'Associação de Agroturismo Acolhida na Colônia, dans la recherche de la réintroduction des pratiques, des connaissances et les pratiques alimentaires régionales. Il prend comme problème de recherche la tension et la proposition de distinction entre les concepts prédominants dans les médias et dans le sens commun concernant le sauvetage ou la récupération de la culture culinaire rurale ancestrale, par opposition à l'idée d'invention des traditions, conjugués à des projets d'agence de mémoire populaire en faveur de la construction imaginaire du territoire alimentaire étudié. Mots-clés : alimentation régionale ; Territoires alimentaires ; Traditions.O estudo investiga as dinâmicas e estratégias articuladas pelo projeto de estruturação do turismo em ambiente rural da agricultura familiar na região das Encostas da Serra Catarinense (SC), pela Associação de Agroturismo Acolhida na Colônia, na busca da reintrodução de práticas, saberes e fazeres alimentares regionais. Toma, como problema de pesquisa, o tensionamento e a proposta de distinção entre os conceitos predominantes na mídia e no senso comum a respeito de resgate ou recuperação da cultura culinária rural ancestral, em contraposição à ideia da invenção das tradições, aliada a projetos de agenciamento da memória popular em prol da construção imaginária do território alimentar em estudo.
