Resumo: This study describes innovative actions in the collection and conservation of Capsicum germplasm from the North of Goiás, Brazil, and explores the relationship between germplasm obtained from that region and the utilization of various types of chilli or hot peppers by the private processors in the state. In addition, this work attempts to identify the profile of potential pepper consumers from the perspective of a study on migration conducted with migrants in the city of Goiania, as migrants tend to retain the habits and customs of their homeland, such as dietary habits.

Además, este trabajo busca identificar el perfil de los consumidores potenciales de chile con la perspectiva del estudio de la migración. La unidad de análisis fue los migrantes residentes en la ciudad de Goiania, porque ellos tienden a mantener los hábitos y las costumbres de sus locales de origen, como los hábitos dietéticos.O trabalho descreve as ações inovadoras de coleta e conservação do gênero Capsicum realizadas no centro norte de Goiás e explora as ligações existentes entre o germoplasma obtido dessa região e a utilização de diversos tipos de pimenta pelas processadoras de pimenta no estado.
