STABILITY OF VITAMIN C IN FRESH CAGAITA AND DURING PULP AND JUICE STORAGE

Resumo: | Fruits of cagaita, in different degrees of maturation (unripe, semi-ripe and ripe), their pulp and juice were evaluated considering the pH, titratable acidity, soluble solids and stability of vitamin C. The pulp was frozen and stored at -18°C, for four months, and analyzed once a month. The juice was refrigerated at 4ºC, during the test period (24 hours), and analyzed five times (0, 2, 4, 6, and 24 hours). Vitamin C contents were 26.84 mg/100 g, 20.21 mg/100 g and 27.46 mg/100 g for the unripe, semi-ripe and ripe fruits, respectively. In the period of storage, there were slight differences between the initial and the final values of pH and soluble solids, for frozen pulp and refrigerated juice, while the vitamin C content showed a considerable reduction. The storage of frozen pulp, for four months, and refrigerated juice, for 24 hours, under experimental conditions, adversely affected the vitamin C content, decreasing it in 33.7% and 56.2%, respectively. Frutos de cagaita, em diferentes estágios de maturação (verde, semi-madura e madura), sua polpa e refresco foram avaliados, quanto ao pH, acidez titulável, sólidos solúveis e estabilidade da vitamina C. A polpa dos frutos foi congelada em freezer (-18ºC) e as análises fisico-químicas foram conduzidas, mensalmente, por quatro meses. O refresco foi refrigerado a 4ºC, durante 24 horas, com análises nos tempos 0, 2, 4, 6 e 24 horas. As concentrações de vitamina C, para frutos verdes, semi-maduros e maduros foram 26,84 mg/100 g, 20,21 mg/100 g e 27,46 mg/100 g, respectivamente. Durante a estocagem da polpa congelada e refresco refrigerado houve leve variação dos valores iniciais e finais de pH, e de sólidos solúveis, enquanto o conteúdo de vitamina C mostrou uma redução considerável. O armazenamento da polpa de cagaita, congelada por quatro meses, e do refresco, refrigerado por 24 horas, nas condições testadas, afetou negativamente a concentração de vitamina C, com redução de 33,7% e 56,2%, respectivamente.
