PHYSICAL-CHEMICAL ANALYSIS AND RESEARCH OF FRAUD OF INFORMAL MILK COMMERCIALIZED IN MOSSORÓ, RN

Resumo: The objective of this work was to analyze the quality of informal milk commercialized in the city of Mossoró, RN, by means of physical-chemical analysis and research of fraud. Samples of raw milk commercialized in four neighborhoods of Mossoró were collected during the months of March and April of 2006. The collection took place weekly, totaling 32 samples. The samples went through physical-chemical analysis (density, fat content, total dry extract, solids-non-fat, grade of Dornic acidity, proof of alcohol and freezing point) and research of frauds, such as: addition of water, of conservatives ( hydrogen peroxide, caustic soda, sodium bicarbonate,  potassium bicarbonate) and restorative (sucrose, starch, chloride). From all the analyzed samples, 50% failed at least one of the physical-chemical tests, by not meeting the standards of current legislation. 50% of the samples did not meet the freezing point standard, followed by ESD (40.6%), EST (21.9%), density (18.8%) and acidity (6.2%). None of the samples met the standard of alcohol proof. From the fraud analysis the addition of water was are only one found.  Most of the milk showed irregularities being unfit for marketing.Keywords: Frauds, informal milk, physiochemical analyses.

Durante os meses de março e abril de 2006 coletaram-se amostras de leite in natura comercializado em quatro bairros do município de Mossoró. As coletas foram realizadas semanalmente, totalizando 32 amostras. Estas passaram por análises físico-químicas (densidade, gordura, extrato seco total, extrato seco desengordurado, acidez em graus Dornic, alizarol e crioscopia) e pesquisa de fraudes, tais como: adição de água, de conservantes (peróxido de hidrogênio, soda caústica, bicarbonato de sódio, bicarbonato de potássio) e reconstituintes (sacarose, amido, cloreto). Do total de amostras analisadas, 50% foram reprovadas nas análises físico-químicas em no mínimo uma das provas, por estarem em desacordo com a legislação vigente. O percentual de amostras em desacordo em relação à crioscopia foi de 50%, seguida do ESD (40,6%), EST (21,9%), densidade (18,8%) e acidez (6,2%). Todas as amostras foram negativas para a prova do alizarol. Das análises de fraudes realizadas, a única observada no leite foi a adição de água.
