The article presents a reflection on the tourism in cattle ranches in the Pantanal of Mato Grosso do Sul discussing the adaptation of the region to meet the demand simposed by the paradigms of social and environmental sustainability. The objective of this study was tounder stand the transformations of the cattle ranches on farms-hotels. The investigation took from survey data of primary nature, collected together entre preneurs of tourism, cattle ranchers, and workers associations, using questionnaire sand semi-structured interviews. It was possible to see the transformation of farm land on farms-hotels, especially from the early 2000, in terms of ecotouris mand rural tourism. The entrance to the tourist activity in rural pantaneiro enabled diversify the source of in come to maintain the survival of agribusiness, adopting as well, the multifunctionality of the productive units, at the same time that meet the growing demand of potential tourists from Brazil and abroad. The Pantanal turns, adapting to the new conditions of competitiveness of capitalism in your pos-productivist phase, which includes the valuation and valuation of nature in the productive processes.
