Resumo: The purpose of this study was to characterize the extracted oils of the seeds of tomato, orange, passion fruit and guava with the objective of using industrial residues. The oils were extracted from the seeds with a Soxhlet extractor, using petroleum ether as solvent, and were characterized by standard methods for oil and fat analysis (free fatty acids, peroxide value, refractive index, iodine value, saponification value, unsaponifiable matter and oxidative stability). The analyses accomplished indicate that these oils possess similar physicochemical characteristics as some edible oils, them they can be a new source of oils for human consumption.

Os óleos foram extraídos das sementes em um extrator Soxhlet, utilizando como solvente o éter de petróleo e a caracterização dos mesmos foi realizada por meio de métodos analíticos padrões para óleos e gorduras (ácidos graxos livres, índices de peróxidos, refração, iodo, saponificação, matéria insaponificável e estabilidade oxidativa).
