Resumo: The grains physical properties study has great importance in the equipments measurement and improvement and in the industrial optimization processes, as well as in the techniques used in storage and silos construction. Among the factors that affect the physical properties of grains, the main ones are: moisture content, drying temperature and impurities. These, in addition to influencing the physical properties, compromise aeration efficiency and contribute to favorable conditions for the development of fungi and pests. Therefore, the objective of this work was to determine experimentally the values of the physical properties of the bulk density, porosity, angle of repose, moisture content and color content of corn, soybean and shelled rice, as a function of the quantity of impurities in the mass of grains. With the results, it was concluded that, except for the total color difference, the increase of the level of impurities in the grain mass influences the bulk density, the porosity, the angle of repose and the moisture content of the evaluated products.

Dentre os fatores que afetam as propriedades físicas dos grãos, os principais são: o teor de água, a temperatura de secagem e as impurezas. Estas, além de influenciar nas propriedades físicas, comprometem a eficiência da aeração e contribuem para gerar condições favoráveis ao desenvolvimento de fungos e pragas. Diante disso, objetivou-se com este trabalho determinar,experimentalmente, os valores das propriedades físicas massa específica aparente, porosidade, ângulo de repouso, teor de água e cor de grãos de milho, soja e arroz em casca, em função da quantidade de impurezas na massa de grãos.
