CHEMICAL TREATMENTS IN MAINTENANCE POSTHARVEST QUALITY FRUITS PITANGA (Eugenia uniflora L.) ABSTRACT:The pitanga (Eugenia uniflora L.) is a fruit of great importance in the North and Northeastern region from the commercial point of view, however it has a relatively short shelf life after harvesting, requiring techniques that prolong its shelf life. In this context, the objective of this work was to evaluate the efficiency of ascorbic acid, citric acid, L-cysteine and calcium chloride in increasing the shelf-life of pitangueira fruits. The fruits were stored under refrigeration for 15 days and evaluated every three days for loss of fresh mass, firmness of the pulp, soluble solids, acidity, pH, shell color, vitamin C content, respiratory rate and phenolic compounds. It was observed a positive effect of the chemical treatments on the maintenance of fruit quality when compared to the control. Calcium chloride presented the most expressive results on fruit quality. Keywords: additives, conservation, refrigeration, shelf life. DOI: http://dx.doi.org/10.5935/2318-7670.v05n04a05 |
