Departamento de Letras, Instituto de Ciências Humanas e Sociais, Universidade Federal de Ouro Preto.A presente dissertação tem como objetivo principal fazer um percurso gastronômico pelo sertão rosiano analisando alguns fragmentos da obra Grande Sertão: Veredas (1956), de Guimarães Rosa, a partir dos códigos relacionados, na narrativa, à alimentação e à comensalidade, com o fito de desvelar seu valor simbólico intrínseco, observando como as práticas alimentares foram empregadas por Rosa, tanto para a construção do arcabouço romanesco, como para a constituição do processo social e da figura do jagunço. Acreditamos que as abundantes referências à alimentação, às preparações, aos utensílios de cozinha e aos ritos de comensalidade atuam como o que chamaríamos de “gatilho” de memória na narrativa de Riobaldo, já que, além de atuar como uma espécie de médium de memória intratextual na obra (pois aciona lembranças), também atua como médium da memória coletiva.This dissertation aims to analyse excerpts from the novel The Devil to Pay in the Backlands (1956), written by Guimarães Rosa, which are related to food and commensality. To perceive their symbolic value, we will scrutinise how food practices were adopted by Rosa to construct his novel framework. Moreover, these references are also responsible for the figuration of the social type character, the “jagunço”. Since references to food, methods of preparation, cooking utensils and commensal rites are a sort of medium in this novel not only for intra-textual memory but also for collective memory. Therefore, we believe that these allusions work as a trigger of Riobaldo itself’s memory.
