Resumo: A descriptive study performed in Olinda town, Northeast Brazil, in 2002, to diagnose the status of the Municipal School Feeding Program. The studied population consisted of a probabilistic sample of 646 students, representing 25% of the municipal schools. Information was gathered applying coded questionnaires addressed to build 4 study profiles: school, snack preparers, students and food consumption. The capacity to process the school meals was evaluated as average; being the items kitchen area, refectory and auxiliary equipments considered the worst. The program lacks of complementary activities, which would allow it a greater development and would enable to improve nutritional conditions. In the profile evaluation of the snack preparers, the lack of training to develop such activity was evidenced. There were not serious problems in general conditions of the kitchens related to lighting, water and air circulation, among others. Regarding the students, they belong to a low socioeconomic class, which is characterized by their parents’ unemployment or low income jobs and large families. The school snack is well accepted but still there are students who buy low nutritional value foods in the school environment. Comments and suggestions of the students about the school snack are not usual, neither there are talks about right ways of feeding; this is worse in school environment. The consumed meals do not meet recommended nutritional values; being calcium and Vitamin A the most affected nutrients. This study constitutes a successful experience to evaluate decentralized Programs of School Feeding in Brazil. The problems found demand urgent responses to rescue the program.

The problems found demand urgent responses to rescue the program.Estudo descritivo realizado no município de Olinda, Nordeste do Brasil, durante o ano 2002, com o objetivo de diagnosticar a situação do Programa de Alimentação Escolar Municipal. População de estudo constituída de uma amostra probabilística de 646 estudantes, representando 25% das escolas municipais. A coleta de dados se realizou utilizando questionários pré-codificados, para traçar quatro perfis de estudo: escola, merendeiras, estudantes e consumo de alimentos. A avaliação da Capacidade de Processamento da Merenda Escolar foi avaliada como regular; sendo os itens área de cozinha, refeitório e equipamentos auxiliares classificados como os piores. O Programa carece de atividades complementares, que lhe permitiriam maior desenvolvimento e possibilitaram melhorar as condições nutricionais. Na avaliação do perfil das merendeiras ficou constatada a falta de preparação para exercer a função, fato que se reveste de maior significado se considerado o baixo nível de instrução geral. Não se evidenciaram graves problemas nas condições gerais da cozinha quanto à iluminação, água, circulação do ar, dentre outros. Os alunos são oriundos de uma classe desfavorecida da população, que se caracteriza pelo desemprego dos pais ou empregos de baixos salários e famílias numerosas. A merenda é bem aceita, não obstante muitos estudantes compram alimentos de baixo valor nutricional no ambiente escolar. Não são comuns os comentários e sugestões dos estudantes sobre a merenda, nem conversas sobre formas corretas de alimentação; isto é pior no ambiente escolar. Os alimentos consumidos não atingem os valores nutricionais recomendados, sendo o Cálcio e a Vitamina A os nutrientes mais afetados. O trabalho constitui uma experiência bem sucedida na avaliação de Programas Descentralizados de Alimentação Escolar no Brasil.
