Resumo: A trial was conducted to evaluate the technical viability of composting for treating inedible residues from bovine slaughter house. Physical and chemical transformations of biomass were monitored during the whole period of composting. The system had two stages. The first one took place at two composting cells and the second one in an impermeable building, were two piles, one from each composting cell was built. Two treatments were evaluated: T1 mixture of wood sawdust and wood shavings with inedible residues of bovine slaughter house; and T2 wood shavings mixed with inedible residues of bovine slaughter house. Each treatment had five replications. Sampling for analysis of physical and chemical composition of biomass was obtained at 30, 60, 90, 120 and 150 days of composting. Biomass temperature was recorded once a day during the whole experimental period. Treatment means were compared through repeated measure procedures with LS Means test (P<0.05). Additionally, linear, quadratic and cubic equations were estimated for temperature of composting. The following variables were measured: dry matter, organic matter, ash, nitrogen, carbon, C/N ratio, phosphorus, potassium, magnesium, pH and biomass temperature. Small variation was observed among the treatments during the whole composting process. Only a numerical variation was observed as composting progressed, not only within but also among treatments. The higher significant difference was obtained for the final content of humidity and pH for both treatments (P<0.05) at the end of experimental period. Apparently, the air environmental temperature had no influence on biomass temperature during the whole composting period. Composting is an alternative for economic and ecologically correct disposing of inedible bovine slaughter house residues even at the end of just 90 days. Therefore, composting ought to be used by bovine producers and industry, helping achieving its environmental sustainability.

Therefore, composting ought to be used by bovine producers and industry, helping achieving its environmental sustainability.O presente trabalho teve como objetivo estudar a viabilidade técnica da compostagem como forma de tratamento de resíduos orgânicos gerados em abatedouros de bovinos, através do monitoramento de transformações físicas e químicas em função do tempo de compostagem, visando reduzir o impacto ambiental gerado por este importante segmento da produção animal. O processo consistiu de dois estágios, sendo o primeiro caracterizado por duas estruturas em alvenaria denominadas de células de compostagem, e o segundo compreendendo a formação de leiras no galpão de compostagem. Durante o estudo foram testados dois tratamentos: T1 mistura de serragem e maravalha com resíduos de abatedouro de bovinos; e T2 maravalha e resíduos de abatedouro de bovinos. Foram utilizadas cinco repetições por tratamento. A amostragem para as análises físico-químicas da biomassa foi realizada aos 30, 60, 90, 120, 150 dias de compostagem. A temperatura da biomassa foi aferida diariamente durante todo o período experimental. As médias dos tratamentos foram comparadas através da análise de medidas repetidas, utilizando o teste LS Means (P<0,05). Também foram obtidas equações de regressão polinomial para temperatura de compostagem. As seguintes variáveis foram analisadas: matéria seca, matéria orgânica, cinzas, carbono (C), nitrogênio (N), relação C/N, fósforo, potássio, magnésio, pH e temperatura da biomassa. Verificou-se para a maioria das variáveis analisadas uma pequena variação em seus teores na medida em que o processo evoluiu, seja comparando o mesmo tratamento ao longo do período, ou comparando os tratamentos entre si. A maior diferença significativa obtida foi para o teor final de umidade e para o pH, entre os dois tratamentos (P<0,05), ao fim da compostagem. Verificou-se também que, aparentemente, a temperatura ambiente do ar não teve influência na temperatura da biomassa durante o processo, já que esta permaneceu sempre abaixo da temperatura do composto, mesmo em dias muito frios.
