Physicochemical characteristics, cellular and microbiological mammary secretion of Santa Inês ewes in lactating and post-weaning period

Resumo: Changes in the composition of milk secretion that ocorremdurante the early stages of involution indicate rapid structural changes in the gland and the mechanisms involved in milk synthesis and secretion. Thus, this study sought to elucidate the physicochemical characteristics and cell of milk from sheep of the Santa Inês during the initial period of mammary involution, evaluating the hydrogen ion concentration, somatic cell count (SCC) and the lactose , protein, fat and total solids, in addition to bacteriological examination. In the post-weaning period significant changes were observed in the composition of milk secretion, as increasing pH and protein content, reduced levels of lactose, total solids and fat, plus a trend in increasing CCS. In the positive bacteriological examination animals were also found changes similar to those that occur in the active involution, except fat. Both at the end of breastfeeding period as the period of active involution was exclusively isolated genus Staphylococcus. Desta forma, o presente estudo buscou elucidar as características físico-químicas e celulares da secreção láctea de ovelhas da raça Santa Inês durante o período inicial de involução mamária, avaliando a concentração hidrogeniônica, a contagem de células somáticas (CCS) e os teores de lactose, proteína, gordura e sólidos totais, além do exame bacteriológico. No período pós-desmame foram observadas alterações significativas na composição da secreção láctea, como aumento no pH e no teor de proteína, redução nos teores de lactose, sólidos totais e gordura, além de uma tendência no aumento da CCS. Nos animais positivos no exame bacteriológico foram encontradas também alterações semelhantes às que ocorrem na involução ativa, excetuando-se a gordura. Tanto no final do período lactante quanto no período de involução ativa foi isolado exclusivamente o gênero Staphylococcus.
