Evaluation of effectiveness of online technical visits to perishable food suppliers of a public university hospital during the COVID-19 pandemic period

Resumo: | The evaluation and selection of suppliers is one of the most important principles for ensuring the quality of the raw materials purchased. According to current legislation, food services must specify criteria for evaluating and selecting suppliers of raw materials, ingredients and packaging. The present study aimed to evaluate the degree of effectiveness of online technical visits to perishable food suppliers at a public university hospital in southern Brazil. This is a descriptive study with the evaluation of secondary data. The itineraries of in-person technical visits carried out in perishable food suppliers in the period from 2017 to 2019 and all the itineraries of technical visits in the online modality carried out in the year 2021 were verified. The inspection itineraries consisted of 51 items distributed in six evaluation topics. Nine face-to-face inspections were identified for suppliers of minimally processed animal and vegetable products. For the inspections in the online mode, four suppliers were inspected. It was observed that the online technical visits had a total adequacy of 81.2% and the face-to-face technical visits a total of 83.5%. From the results of the study, it can be concluded that online technical visits are as effective as face-to-face technical visits. However, it is suggested that in the online modality the results obtained in each topic should be analyzed considering the specifics of the technical visit. |

A avaliação e seleção dos fornecedores são etapas importantes para a garantia da qualidade das matérias-primas adquiridas. Conforme legislações vigentes, os serviços de alimentação devem especificar os critérios para avaliação e seleção dos fornecedores de matérias-primas, ingredientes e embalagens. O presente estudo teve como objetivo avaliar o grau de efetividade de visitas técnicas online a fornecedores de alimentos perecíveis de um hospital público universitário do sul do Brasil. Trata-se de estudo descritivo com a avaliação dos dados secundários. Foram verificados os roteiros de visitas técnicas presenciais realizadas em fornecedores de alimentos perecíveis no período de 2017 a 2019 e os roteiros de visitas técnicas na modalidade online realizadas no ano de 2021. Os roteiros de inspeção constavam de 51 itens distribuídos em seis tópicos de avaliação. Foram identificadas nove inspeções presenciais para fornecedores de produtos de origem animal e vegetais minimamente processados. Para a modalidade online foram inspecionados quatro fornecedores. Observou-se que as visitas técnicas online, tiveram um total de adequação de 81,2% e as presenciais um total de 83,5%. A partir dos resultados do estudo, pode-se concluir que as visitas técnicas online foram tão efetivas quanto às visitas técnicas presenciais. Entretanto, sugere-se que na modalidade online devem ser analisados os resultados obtidos em cada tópico considerando as especificidades da visita técnica.
