Resumo: People go to open markets looking for good quality food, from this premise the present project aimed to evaluate the quality of eggs marketed in open markets in relation to the different types of eggs sold in supermarkets in the city of Uberlândia. The design was completely randomized and the treatments were free-range eggs, organic eggs, cage-free chicken eggs and conventional eggs and the egg was used as a repetition. Experimental data were collected in three days, spaced weekly and for each day eggs were purchased in five regions (north, south, east, west and center of the city of Uberlândia, state of Minas Gerais, Brazil). The evaluated parameters were egg weight, yolk color, specific gravity, yolk pH and Haugh Units. Specific Gravity did not have the egg as a repeat, since these data were obtained by weighted average. The data that showed a normal pattern were Haugh Units and specific gravity and data of weight, pH and yolk color showed non-parametric behavior. The means were compared by the Shapiro-Wilk, Anderson Darling and Kolmogorov-Smirnov tests. The data that showed a normal pattern were Haugh Units and specific gravity and data of weight, pH and yolk color had non-parametric behavior. Concludes that eggs of open fair did not present inferior quality when compared to the supermarket eggs, presenting difference significant only in egg weight.

O delineamento usado foi o inteiramente casualizado e os tratamentos foram ovos de feira livre, ovos orgânicos, ovos caipiras, ovos livres de gaiolas e ovos tradicionais, tendo sido usado o ovo como repetição. Os dados experimentais foram coletados em três dias, espaçados quinzenalmente e para cada dia foram comprados ovos em cinco regiões (norte, sul, leste, oeste e centro da cidade de Uberlândia, estado de Minas Gerais, Brasil). Os parâmetros avaliados foram peso dos ovos, cor de gema, gravidade específica, pH da gema e Unidades Haugh. A Gravidade Específica não teve o ovo como repetição, uma vez que esses dados foram obtidos por média ponderada. Os dados avaliados parametricamente foram Unidades Haugh e gravidade especifica e os não paramétricos foram peso, pH e cor de gema. Houve diferença significativa estatística somente para peso dos ovos.
