Resumo: The coffee culture has great relevance in the Brazilian economic scenario, which is a representative producer and exporter of this product worldwide. Therefore, farmers are increasingly looking for new management models in agribusiness to achieve greater competitiveness and profitability. The purpose of this study is to analyze the production costs of two variations of coffee, arabica coffee and conilon coffee, in the productive phase of the tillage, compared to the selling price of the 60 kg bag and if the type of coffee impacts the analyzed values. This is a descriptive, with quantitative approach and documentary research, using data from Agrianual of selling price and production costs of coffee in the period from 2009 to 2018. For analysis were used the statistical tools: Mann-Whitney, Shapiro-Wilk, Spearman and Pearson tests. The results indicated that variable ‘selling price’ and twelve cost variables showed statistically significant variance reinforcing that costs and prices vary according to the type of coffee. Therefore, information can be provided to the manager/rural producer for better management and profitability forecast according to the choice of coffee variety.

Por isso, os produtores rurais buscam por novos modelos de gestão no agronegócio, para alcançar maior competitividade e rentabilidade. O objetivo dessa pesquisa é analisar os custos de produção de duas variações de café, o arábica e o conilon, na fase produtiva da lavoura, em relação ao preço de venda da saca de 60 kg e se o tipo de café impacta nos valores analisados. Esta é uma pesquisa descritiva, com abordagem quantitativa e documental, que utiliza dados do Agrianual de preço de venda e custos de produção de café no período de 2009 a 2018. Para a análise foram utilizados parâmetros estatísticos como testes de Mann-Whitney, Shapiro-Wilk e verificação de correlações de Spearman e Pearson. Os resultados indicaram que das variáveis analisadas, a variável “preço de venda” e doze variáveis de custo apresentaram variância estatística significativa reforçando que os custos e o preço variam conforme a espécie do café.
