This work aims to compare two quantitative methods for harvesting total soluble carbohydrates and starch in processed animal products and using statistical tools, to determine which one is more efficient, in addition to discovering which one would be better suited to a production process according to your demand. For this, the method of reaction with anthrone was used, whose analytical result is instrumentally determined, and the Lane-Eynon method, which is a titrimetric method based on the visualization of the color of the solution after the reduction of Copper (Cu2+). The methodology used was the execution of the two methods by five different analysts in a laboratory environment and subsequent statistical study to evaluate the results obtained and determine the efficiency of the methods. As expected, the instrumental method presented more concise results when compared to the titrimetric method, since the result is given by the instrument and requires a lower degree of analytical interpretation by the analyst, however, the titrimetric method also presented excellent results with low variation.
