Resumo: | The present thesis was elaborated for aim to evaluate the effects of including crude glycerin (CG) on finishing lambs diets on intake, nutrients digestibility, performance, economical analysis, traits carcass, quality and safe of meat lambs. Thirty five intact male lambs (Santa Inês), with 20±2,27 kg of initial body weight, were randomly assigned to five treatments, with six replicates, consisted of increasing crude glycerin levels on the diet: 0, 3, 6, 9 and 12% of diet dry matter. After ten days of adaptation, five animals were slaughtered to determine initial carcass dressing and then estimate initial carcass weight, which was used to obtain carcass gain (CG), expressed in kg/day or in percentage to average daily gain (CG/ADG). After period adaptation, the thirty animals were housed an individual pens and received the diets with 30% of roughage and 70% of concentrate. When the group reached average body weight of 35 kg, the animals were slaughtered. The intake of dry matter (DM), g/day and g/kg of body weight, organic matter (OM), g/day and g/kg of body weight, crude protein (CP), neutral fiber detergent (NFD), g/day and g/kg of body weight, non-fibrous carbohydrates (NFC) and total digestible nutrients decrease linearly as the level crude glycerin in the diet (P<0,05). The intake of ether extract had a quadratic effect (P<0,05), estimating at the level of 10,78% CG, the maximum intake of 57,62 g/day. Differences no were detected (P>0,05) on digestibility of DM, OM and CP. The digestibility NFD had a effect quadratic (P<0,05), estimating at the level 7,30% of CG, the minimum digestibility on 38,44%. The digestibility of ether extract decrease linearly and the digestibility of NCF increase linearly with the inclusion of CG in the diet (P<0,05). The body weight at slaughter, the empty body weight and feed to gain ratio had a quadratic effect (P<0,05). The empty body weight in relation body weight at slaughter, empty body weight gain, carcass gain (CG), carcass gain relation average daily gain (CG/ADG) and average daily gain (ADG) decrease linearly (P<0,05) as the level CG in the diet. The hot carcass weight and coldhad a quadratic effect (P<0,05) and the hot dressing percentage on shrunk and the empty body weight, cold dressing percentage on shrunk and the empty body weight decrease linearly as the level CG in the diet (P<0,05). Differences no were detected on cooling losses and backfat thickness (P>0,05), but the ribeye area had a quadratic effect (P<0,05). Differences no were detected (P>0,05) on main carcass cuts and neck weight, but the shoulder and rib weight decrease linearly (P<0,05) as the level CG in the diet. The loin and leg weight had a quadratic effect (P<0,05). The empty body weight had a quadratic effect (P<0,05). Differences no were detected (P>0,05) on yield non carcass tissue components: organs, diaphragm, visceral fat, intern fat, reproductive tract and trachea, feet, head and blood. The yield of stomach and intestine had a quadratic effect (P<0,05) but the fur yield decrease linearly as the level CG in the diet (P<0,05). The thaw losses had a quadratic effect (P<0,05), but differences no were detected on initial and final pH, cooking losses, total losses and shear force of Longissimus dorsi muscle (P>0,05). Differences no were detected (P>0,05) on moisture, ash and ether extract content of meat lambs, but the crude protein content decrease linearly (P<0,05) as the level CG in the diet. The copper content on liver lambs increase linearly (P<0,05) as the level CG in the diet, but the zinc content decrease linearly as the level CG in the diet (P<0,05). The crude glycerin with 36,20% of glycerol could included in the diet of finishing lambs in 6% of dry matter, optimizing the feed to gain ratio. If the price crude glycerin reach until 70% of corn price, could included on the finishing diet lambs until 6% on the diet dry matter, promoting economics benefits. The inclusion crude glycerin on the finishing diets lambs no promote changes that promise the quality and safe meat. |

The inclusion crude glycerin on the finishing diets lambs no promote changes that promise the quality and safe meat.A presente tese foi elaborada com o objetivo de avaliar o efeito dos níveis de inclusão da glicerina bruta (GB), contendo 36,20% de glicerol, na dieta de cordeiros em terminação, sobre o consumo, digestibilidade dos componentes da dieta, desempenho, avaliação econômica, características de carcaça, qualidade e segurança da carne dos animais. Utilizaram-se 35 cordeiros, recém-desmamados, machos não castrados, da raça Santa Inês, com peso médio inicial de 20±2,27 kg, distribuídos em delineamento inteiramente casualizado, a cinco tratamentos experimentais, com seis repetições, que consistiram de níveis de inclusão da GB na dieta, emsubstituição ao milho, sendo 0, 3, 6, 9 e 12% na matéria seca (MS) total da dieta. Após 10 dias de adaptação, cinco animais foram abatidos para se obter o rendimento de carcaça inicial, estimando-se o peso de carcaça inicial, de forma a obter o ganho de carcaça diário (GC) e o ganho de carcaça em relação ao ganho médio diário de peso (GC/GMD). Decorrido o período de adaptação, os 30 animais restantes foram alojados em baias individuais onde receberam dietas completas contendo, em base da matéria seca, 30% de silagem de milho e 70% de concentrado. Quando os animais atingiram peso médio aproximado de 35 kg, foram abatidos. Houve efeito linear decrescente (P<0,05) sobre o consumo de MS em g/dia e g/kg de peso corporal, matéria orgânica (MO) em g/dia e g/kg de peso corporal, proteína bruta (PB), FDNcp em g/dia e g/kg peso de corporal, carboidratos não fibrosos (CNF) e consumo de nutrientes digestíveis totais. Houve efeito quadrático (P<0,05) dos níveis de GB na dieta sobre o consumo de extrato etéreo (EE), estimando-se em um nível de 10,81% de GB, o consumo máximo de 57,62 g/dia. Não houve efeito (P>0,05) dos níveis de GB na dieta sobre a digestibilidade da MS, MO e PB. Houve efeito quadrático (P<0,05) sobre o coeficiente de digestibilidade da FDNcp, estimando-se a digestibilidade mínima de 38,44% para o nível de 7,30% de inclusão de GB. Foi observado efeito linear decrescente sobre o coeficiente de digestibilidade do EE (P<0,05) e para o coeficiente de digestibilidade (P<0,05) dos CNF foi observado efeito linear crescente (P<0,05). Houve efeito quadrático (P<0,05) dos níveis de GB sobre o peso corporal final dos animais, peso de corpo vazio e conversão alimentar (em relação ao GMD e em relação ao GC). Houve efeito linear decrescente (P<0,05) dos níveis de GB sobre o peso de corpo vazio em relação ao peso corporal dos animais e ganho de peso de corpo vazio. O ganho de carcaça, GC/GMD e o GMD apresentaram efeito linear decrescente (P<0,05). Houve efeito quadrático (P<0,05) dos níveis de GB sobre o peso de carcaça quente e peso de carcaça fria, sendo que o rendimento de carcaça quente em relação ao jejum, rendimento de carcaça quente em relação ao peso de corpo vazio, rendimento de carcaça fria em relação ao jejum e rendimento de carcaça fria em relação ao peso de corpo vazio apresentaram efeito linear decrescente (P<0,05). Não houve efeito dos níveis de GB (P>0,05) sobre as perdas de peso da carcaça pelo resfriamento e espessura de gordura subcutânea. Entretanto, a área de olho de lombo apresentou efeito quadrático (P<0,05) estimando-se o valor máximo de 13,20 cm2 para o nível de 4,14% de inclusão da GB na MS da dieta. Não houve efeito (P>0,05) dos níveis de GB sobre a área de olho de lombo em relação ao peso da carcaça. O rendimento dos cortes da carcaça e o peso do pescoço não foram influenciados (P>0,05) pela inclusão de GB na dieta. Entretanto, os pesos da paletae costela decresceram linearmente (P<0,05) com o aumento da inclusão da GB (P<0,05) e os pesos do lombo e perna apresentaram efeito quadrático (P<0,05). A inclusão de GB na dieta não afetou (P>0,05) o rendimento de alguns tecidos não componentes da carcaça, como órgãos, diafragma, gordura visceral, gordura interna, aparas, pés, cabeça e sangue. Já o rendimento de estômagos e intestinos apresentou efeito quadrático (P<0,05) e o rendimento de pele decresceu linearmente com o aumento de GB (P<0,05). Houve efeito quadrático (P<0,05) sobre as perdas por descongelamento da carne. Os níveis de GB na dieta não influenciaram (P>0,05) o pH inicial e final, as perdas por cocção, perdas totais e força de cisalhamento do músculo Longissimus dorsi. Não houve efeito (P>0,05) dos níveis de GB sobre os teores de umidade, cinzas e EE da carne, mas o teor de PB decresceu linearmente com o aumento de GB nas dietas (P<0,05). Houve maior deposição de cobre no fígado dos animais (P<0,05) alimentados com GB na dieta, já o teor de zinco decresceu linearmente na carne (P<0,05) com o aumento dos níveis de inclusão da GB. A glicerina bruta contendo 36,20% de glicerol pode ser incluída na dieta de cordeiros em terminação em até 6% na matéria seca da dieta, otimizando a conversão alimentar dos animais. Quando o preço da glicerina representar até 70% do preço do milho, esta poderá ser incluída na dieta de cordeiros em terminação em até 6% na MS da dieta, com benefícios econômicos.
