Resumo: | A significant increase in the grain sector has been observed over the last few years, leading to the expansion of the balance of trade. However, in various Brazilian States, storage systems are composed of old structures, precarious for storage which end up compromising the quality of the product during storage. In order for the sector to increase exports and gain credibility on the world market, storage systems should be adapted to international quality standards. These demands have heightened interest in the use of effective pest control techniques with minimal contamination, of which hermetic storage in silos was emphasized and utilization de allyl isothiocyanate (AITC). In the search for information which supports the method for storage in silos, the present work was developed with the objective of estimating the dry material losses and evaluating the utilization of AITC and its possible effect on the preservation of corn grain quality when stored in hermetic units. Corn grain with moisture contents of 14.8% and 17.9% w.b. was added to polyethylene bags, impermeable to gas and submitted to a 300 μL L-1 AITC treatment, each was done in triplicate. AITC was applied on filter paper measuring approximately 5 cm2 and was placed inside the bags containing the grain. After AITC treatment, all excess air was removed and the bags were sealed with a thermal sealing machine. The control sample was processed and stored under the same conditions, however in the absence of AITC. After all bags were closed and sealed, they were stored in temperature controlled chambers at 15, 25, and 35 °C. A total of 180 bags were used, including three repetitions for each combination of moisture content, temperature, treatment and storage period. During a 150 day period, three bags corresponding to each moisture content, temperature and treatment were removed from the chambers at 30 day intervals for the measurement of O2 and CO2 concentrations. Afterwards, the corn was submitted to commercial classification, moisture content, apparent specific mass, germination potential and electrical conductivity analyses and later disposed of. To estimate the loss of dry material, a model was developed as a function of the respiratory rate of corn, considering the occurrence of aerobic and anaerobic respiration. From the obtained results, it could be concluded that the consumption of O2, the production of CO2, and consequently the dry material mass were affected by the corn s moisture content and temperature. At temperatures of 15, 25 and 35 °C, the stored corn with moisture contents of 14.8 and 17.9% maintained dry material losses at levels less than 0.5%, the limit of dry material loss generally used by open storage systems. Due to the low respiratory activity of the corn and the microflora, and the low production of CO2 during the anaerobiosis phase, the increase in dry material loss with time was disregarded. The loss of dry material in stored corn with a moisture content of 17.9% and temperature of 35 °C was inferior to the loss verified for corn stored at 25 °C. However, by monitoring CO2 concentrations at intervals before 30 days, the results may be inversed for the given conditions. In relation to the quality parameters evaluated, it was verified that for the conditions utilized in this study, the dosage of 300 μL L-1 of AITC did not significantly affect the physiological quality of the corn stored in hermetic bags, inducing the idea that it did not have a controlling effect on the microflora present. Storage in hermetic bags permits the stability of moisture content in the corn during the complete 150 day period, independent of temperature. Storage of corn with moisture contents of 14.8 and 17.9% in hermetic bags at temperatures of 15, 25 and 35 °C for a period of 150 days can be achieved without reducing quality standards for commercial usage. Corn grain storage with moisture contents of 14.8% allow for the preservation of its characteristics for greater time periods and with fewer dry material losses than the storage of grains with moisture contents of 17.9%. The typical acceptable limit (0.5%) of dry material loss for corn storage in open systems cannot be applied to hermetic systems. This is because as the grain enters anaerobiosis, its respiration rate decreases and the increment in dry material losses decrease with time to the point where it becomes negligible. So, the dry material loss can be considered maximum before reaching levels of 0.5%, since while the grains continue to deteriorate, quality standards are also reduced as storage time increases. For this reason, it is important for more detailed studies to be done, with more frequent measurements of CO2 concentrations for grains stored with high moisture contents and for long time periods. Limits for dry material loss in hermetic grain storage units should also be established for corn grain. |

No entanto, em diversos estados, o sistema de armazenagem é constituído por estruturas antigas, sucateadas e em condições precárias de armazenagem, o que acaba por comprometer a qualidade do produto durante o armazenamento. Para que o setor aumente as exportações e ganhe espaço no mercado mundial, os sistemas de armazenagem devem ser adequados aos padrões internacionais de qualidade. Estas exigências têm provocado grande interesse pelo uso de controles efetivos de pragas com nível mínimo de contaminação, dentre os quais tem se destacado o armazenamento hermético em silos bolsa e a utilização de isotilcianato de alilo (ITCA). Na busca por informações que subsidiem a adoção do método de armazenamento em silos bolsa, desenvolveu-se o presente trabalho com o objetivo de estimar a perda de matéria seca e avaliar a utilização do ITCA e seu possível efeito sobre a preservação da qualidade de grãos de milho armazenados em bolsas herméticas. Para isto, grãos de milho com teores de água de 14,8 e 17,9% b.u. foram acondicionados em bolsas de material polietileno impermeável a gases e submetidos ao tratamento com ITCA na dosagem de 300 μL L-1 em três repetições. O ITCA foi aplicado sobre papel filtro com dimensões de aproximadamente 5 cm2, e este foi colocado dentro das bolsas contendo grãos. Após o tratamento, todo o ar em excesso contido nas bolsas foi retirado e as bolsas foram lacradas por meio de uma máquina seladora térmica. Para o tratamento controle, os grãos foram armazenados nas mesmas condições, porém, na ausência do ITCA. Depois do fechamento das bolsas com e sem ITCA, estas foram armazenadas em câmaras com temperaturas controladas de 15, 25, e 35 °C. Foram utilizadas no total 180 bolsas, sendo três bolsas (repetições) para cada teor de água dos grãos, temperatura, tratamento e período de armazenamento. Por um período de 150 dias, em intervalos de 30 dias, três bolsas contendo grãos, correspondente a cada teor de água, temperatura e tratamento, foram retiradas das câmaras para a medição das concentrações de O2 e CO2. Em seguida, os grãos foram submetidos às análises de classificação comercial, teor de água, massa específica aparente, potencial de germinação e condutividade elétrica sendo descartados após a realização das análises. Para se estimar a perda de matéria seca, foi desenvolvido um modelo em função da taxa respiratória dos grãos, considerando-se a ocorrência de respiração aeróbica e anaeróbica. Dos resultados obtidos, foi possível concluir que o consumo de O2, a produção de CO2 e, conseqüentemente a massa de matéria seca foram afetados pelo teor de água dos grãos e pela temperatura. Em temperaturas de 15, 25 e 35 °C, os grãos armazenados com teor de água de 14,8 e 17,9% mantiveram os níveis de perda de matéria seca abaixo de 0,5%, limite de perda de matéria seca comumente utilizada para o armazenamento em sistemas abertos. Devido à baixa atividade respiratória dos grãos e da microflora e à baixa produção de CO2 ocorrida na fase de anaerobiose, o incremento de perda de matéria seca com o tempo passou a ser desconsiderado. A perda de matéria seca dos grãos de milho armazenados com teor de água de 17,9%, em temperatura de 35 °C foi inferior à perda verificada para os grãos armazenados em temperatura de 25 °C. No entanto, um monitoramento das concentrações de CO2 em períodos inferiores a 30 dias, para estas condições, poderia vir a indicar resultados inversos. Em relação aos parâmetros de qualidade avaliados, verificou-se que para as condições utilizadas neste estudo, a dosagem de 300 μL L-1 de ITCA não afetou significativamente a qualidade fisiológica dos grãos de milho armazenados em bolsas herméticas, induzindo a idéia de não ter tido efeito no controle da microflora presente. O armazenamento em bolsas herméticas permitiu a estabilidade dos teores de água dos grãos de milho ao longo de 150 dias, independentemente da temperatura. É possível o armazenamento dos grãos de milho com teores de água de 14,8 e 17,9% em bolsas herméticas sob temperaturas de 15, 25 e 35 °C durante 150 dias, sem que haja redução no seu padrão de qualidade para fins de comercialização. O armazenamento de grãos de milho com teores de água de 14,8% permite manter suas características por períodos relativamente maiores e com menores perdas de matéria seca do que o armazenamento de grãos com teor de água de 17,9%. O limite usualmente aceitável de 0,5% de perda de matéria seca para o armazenamento de milho em sistemas abertos não pode ser aplicado a sistemas herméticos. Isto por que à medida que os grãos entram em anaerobiose, sua taxa respiratória passa a ser decrescente, e o incremento de matéria seca decresce com o tempo a ponto de se tornar desprezível. Assim, a perda de matéria seca pode ser considerada máxima antes que se atinjam níveis de 0,5%, enquanto os grãos continuam em processo de deterioração, podendo ter seu padrão de qualidade reduzido com o aumento do tempo de armazenamento.
