Resumo: The higher severity of environmental legislation coupled with market demands have driven the implementation of preventive practices, such as the efficient use of natural resources, water reuse and adequacy of treatment and final disposal of the leavings. However, the application of preventive practices for water conservation and environmental control in the dairy industry is still incipient in relation to other sectors. In this context, the meaning of this study was to evaluate processes and procedures and develop tools to support the implementation of an environmental management system for the dairy industry. To this purpose, the work was divided into three phases. The first one aimed to characterize and evaluate procedures for reuse of CIP's solutions and their respective rinses, to get this results tests were performed on a filling line of pasteurized milk and pasteurization line. We tested four reuses for the alkaline solution and two reuses for the acid solution. Were assessed physicochemical parameters as well as microbiological of the solutions over the defendants, and also, the microbiological parameters of the surface equipment. The second phase aimed to develop a mass balance of water, steam and leavings of eleven processing lines of the dairy industry, and evaluate the influence of the technology in environmental aspects. The studies were conducted from the environmental analyses of the processes of eight dairy industries. Laboratory tests were performed to characterize some specific process s leavings. In the third phase, from the information collected on the first and second ones, were developed two tools to support the implementation of an environmental management system in the dairy industry. One refers to a multimedia system, which has as main objective to provide material to awareness, and at the same time prepare, the owners, managers, technicians and other employees of the industry about an implementation of an environmental management system. The other tool refers to a software for environment diagnosis and simulation of changes in the process capable of evaluating the environmental impact assessment and scaling various wastewater treatment systems with cost analysis. Regarding the evaluation of procedures for regeneration and reuse of solutions CIP's, it s possible to conclude that the technique was adequate and sufficient to ensure the sanitation of equipment and piping. Despite changes in physicochemical parameters of solutions, there were no microbiological alterations in the solutions and equipment surfaces. The technique also proved to be economically viable by reducing the consumption of chemicals beyond the environmental benefits it can provide. With regard to the results of mass balance and influence of the technology on environmental aspects of the dairy industry we concluded that: I) The technology used in the production process has great influence on the environmental aspects of the dairy industry, and the level of awareness of the employees cast a decisive factor on the smaller industries, II) the small scale industries and with lower levels of automation tend to have relatively higher environmental impacts, mainly due to the lack of adaptation of the layout and awareness of employees; III) In the production lines of cheese, cream cheese and ricotta, the technology adopted in the separation of the whey has a profound influence on the environmental aspects of the industry, and IV) Regardless of the size of industry and technology that can be adopted, it s possible, with simple and viable measures, to reduce the water consumption and it s volume as well as the pollution load of the generated wastewater. In organizing the multimedia system we chose five instructional modules: I) Environmental education; II) Environmental management system; III) Leavings; IV) Training program on Good Environmental Practices, and V) Utilization of by-products, still containing the module "Items of Support" linked to Learn More, Legislation and Glossary. The environmental assessment software and industry simulation consists of four interfaces that include: company, product, report and dimensioning, yet the home page for user registration and module tutorial that helps the utilization of the software. According to the assessment result, it could be observed that there was a great acceptance of the two developed tools (multimedia system and software). There was identified a great potential to apply them as a support to the implementation of an environmental management system in the dairy industry. The tools and guidance for their proper use can be critical to enhance the achievement of intended goals.

The tools and guidance for their proper use can be critical to enhance the achievement of intended goals.O aumento do rigor da legislação ambiental aliado às exigências do mercado tem impulsionado a aplicação de práticas preventivas, como o uso eficiente dos recursos naturais, o reuso de água e a adequação dos sistemas de tratamento e disposição final dos resíduos. No entanto, a aplicação de práticas preventivas para uso racional da água e controle ambiental na indústria de laticínios ainda é incipiente em relação a outros setores. Nesse contexto, o objetivo geral desse trabalho foi avaliar processos e procedimentos e desenvolver ferramentas de apoio a implantação de um sistema de gestão ambiental para a indústria de laticínios. Para tal, o estudo foi dividido em três fases. Na primeira fase objetivou-se caracterizar e avaliar procedimentos de reuso das soluções CIP s e seus respectivos enxágues, sendo os testes realizados em uma linha de envase de leite pasteurizado e uma linha de pasteurização. Foram testados quatro reusos para a solução alcalina e dois reusos para a solução ácida. Avaliaram-se parâmetros físico-químicos e microbiológicos das soluções ao longo dos reusos, além de parâmetros microbiológicos da superfície dos equipamentos. A segunda fase teve como objetivo elaborar um balanço de massa de água, vapor e resíduos de onze linhas de processamento da indústria de laticínios, e avaliar a influência da tecnologia em relação aos aspectos ambientais. Os estudos foram realizados a partir do diagnóstico ambiental dos processos em oito laticínios. Foram realizados testes laboratoriais para caracterização de alguns resíduos específicos do processo. Na terceira fase, a partir das informações coletadas nas fases anteriores, desenvolveram-se duas ferramentas de apoio a implantação de um sistema de gestão ambiental na indústria de laticínios. Uma refere-se a um sistema multimídia, que tem como principal objetivo oferecer um material de apoio para o treinamento e conscientização dos proprietários, gerentes, técnicos e demais colaboradores da indústria, em relação à aplicação de um sistema de gestão ambiental. A outra ferramenta refere-se a um software para diagnóstico ambiental e simulação de alterações no processo, com avaliação dos impactos ambientais e dimensionamento de diferentes sistemas de tratamento de efluentes com análise de custo. Em relação à avaliação dos procedimentos de regeneração e reuso das soluções CIP s concluiu-se que a aplicação da técnica mostrou-se adequada e suficiente para garantir a higienização dos equipamentos e tubulações, visto que apesar das alterações nos parâmetros físico-químicos das soluções, não ocorreram alterações microbiológicas nas soluções e nas superfícies dos equipamentos. A técnica também mostrou-se economicamente viável pela redução do consumo de produtos químicos além dos benefícios ambientais que pode proporcionar. No que se refere aos resultados do balanço de massa e influência da tecnologia nos aspectos ambientais da indústria de laticínios, concluiu-se que: I) A tecnologia adotada nos processos produtivos exerce grande influência nos aspectos ambientais da indústria de laticínios, sendo o nível de conscientização dos colaboradores um fator decisivo para as indústrias de menor porte; II) As indústrias de pequeno porte e com menor nível de automação tendem a apresentar, relativamente, maiores impactos ambientais, principalmente, pela falta de adaptação do layout e conscientização dos colaboradores; III) Nas linhas de produção de queijos, requeijão e ricota, a tecnologia adotada na separação do soro exerce grande influência nos aspectos ambientais da indústria; e IV) Independente do tamanho da indústria e da tecnologia adotada, é possível, com medidas simples e viáveis, reduzir o consumo de água e o volume e carga de poluição dos efluentes gerados. Na organização do sistema multimídia optou-se por cinco módulos instrucionais: I) Educação ambiental; II) Sistema de gestão ambiental; III) Resíduos; IV) Programa de treinamento sobre Boas Práticas Ambientais; e V) Aproveitamento de Subprodutos, contendo ainda o módulo Itens de Apoio com Saiba Mais, Legislação e Glossário. O software para diagnóstico ambiental e simulação na indústria é constituído por quatro interfaces que incluem: empresa, produto, relatório e dimensionamento, além da página inicial para cadastro do usuário e do módulo tutorial que auxilia no uso do programa. De acordo com o resultado da avaliação observou-se uma ótima aceitação pelas duas ferramentas desenvolvidas (sistema multimídia e software), sendo identificado um grande potencial para aplicá-las como suporte para a implantação de um sistema de gestão ambiental na indústria de laticínios.
