Agaricus blazei é um cogumelo comestível originário da região de Piedade, SP. A intenção deste trabalho foi verificar a capacidade antioxidante e composição fenólica de extratos do cogumelo Agaricus blazei. Realizou-se desde a preparação dos extratos (Metanol 80%, Acetona 80% e Metanol 80%/Acetona 80%) as análises da composição fenólica e a análise da atividade antioxidante (DPPH e ABTS). Os melhores extratores de polifenóis totais foram os extratos Met/Acet e Acet 80%, no entanto, para os ésteres tartáricos e os flavonóis o melhor extrator foi a Acet 80%. A atividade antioxidante mais elevada foi observada com Met/Acet e extrato de Acet 80%. ____________________________________________________________________________ ABSTRACTThe interest in the production and consumption of mushrooms is increasing due to its nutritional and therapeutic activity that is directly related to its biologically active compounds responsible for antioxidant activity. Agaricus blazei is an edible mushroom from the region of Piedade, Brazil. The intent of this study was to determine the antioxidant capacity and phenolic composition of extracts of the mushroom Agaricus blazei. Held since the preparation of the extracts (methanol 80%, acetone 80% and methanol 80%/ acetone 80%) analyzes of phenolic composition and analysis of antioxidant activity (DPPH and ABTS). The best total polyphenols pullers extracts were methanol/acetone and acetone 80% However, for flavonols and tartaric esters the best extractor was acetone 80%.
