Resumo: The Cassava (Manihot esculenta Crantz) is the basis of several typical foods from the northern region of Brazil, among which stand out cassava flour, water flour, tapioca gum and tucupi. As certain varieties of cassava have a high cyanide content, foods prepared from these varieties must be evaluated for their cyanide content, in order to guarantee food health. In this sense, this work aimed to evaluate the free cyanide content in tucupi samples sold in popular markets in Santarém-PA, Brazil. All samples had an acidic pH, varying between 3.35 and 4.50, which is conducive to the proliferation of fungi and yeasts. As for the free cyanide content, about 81.4% had levels greater than 10 mg HCN kg-1 of sample, which represents a risk to human health, if consumed without prior cooking. Therefore, it is necessary to standardize the tucupi in these places, to guarantee the food security of the population.

Como certas variedades de mandioca apresentam elevado teor de cianeto, alimentos preparados a partir dessas variedades devem ser avaliados quando ao seu teor de cianeto, a fim de garantir a saúde alimentar. Nesse sentido, este trabalho teve por objetivo avaliar o teor de cianeto livre em amostras de tucupi comercializados em mercados populares de Santarém-PA, Brasil. Todas as amostras apresentaram pH ácido, variando entre 3,35 e 4,50, o qual é propício para proliferação de bolores e leveduras. Quanto ao teor de cianeto livre, cerca de 81,4% apresentaram teores maiores que 10 mg HCN kg-1 de amostra, o que representa um risco a saúde humana, caso consumidos sem prévia cocção.
