Post-harvest quality of Biofortified vegetables: bibliographical review

Resumo: Biofortification, an important strategy in combating hidden hunger, aims to improve the nutritional quality of basic foods from so-called “functional agriculture” by increasing the bioavailable levels of vitamins and functional nutrients in agricultural products to be harvested. The adoption of this technique tends to result in varieties with better productivity, adapted to the context of climate change and with better nutritional, sensorial and post-harvest characteristics. This bibliographic review aimed to present and discuss results from the literature on post-harvest quality in biofortified vegetables. The methodological procedures were based on the Literature Review, whose survey of the most relevant publications on the subject occurred through articles published in periodicals, dissertations, theses, books, conference annals and monographs available in databases such as the Embrapa, Google Scholar and institutional academic repositories. It is concluded that studies that aim to determine the performance and quality of biofortified vegetables post-harvest are important, aiming to combine the characteristics of productivity, nutritional quality, high durability and sustainability. The challenges are to maintain the quality and nutritional levels of the biofortified product for as long as possible, reduce processing losses, as well as provide longer shelf life.

La adopción de esta técnica tiende a dar como resultado variedades con mejor productividad, adaptadas al contexto de cambio climático y con mejores características nutricionales, sensoriales y poscosecha. Esta revisión bibliográfica tuvo como objetivo presentar y discutir los resultados de la literatura sobre la calidad poscosecha de hortalizas biofortificadas. Los procedimientos metodológicos se basaron en la Revisión de Literatura, cuyo levantamiento de las publicaciones más relevantes sobre el tema se produjo a través de artículos publicados en periódicos, disertaciones, tesis, libros, anales de congresos y monografías disponibles en bases de datos como Embrapa, Google Scholar y repositorios académicos institucionales. Se concluyó que son importantes los estudios que tienen como objetivo determinar el rendimiento y la calidad de los vegetales biofortificados poscosecha, buscando combinar las características de productividad, calidad nutricional, alta durabilidad y sostenibilidad. Los desafíos son mantener la calidad y los niveles nutricionales del producto biofortificado durante el mayor tiempo posible, reducir las pérdidas en el procesamiento y proporcionar una vida útil más larga.A biofortificação, estratégia importante no combate à fome oculta, visa a melhoria da qualidade nutricional dos alimentos básicos da denominada “agricultura funcional” pelo aumento dos teores biodisponíveis de vitaminas e nutrientes funcionais em produtos agrícolas a serem colhidos. A adoção dessa técnica tende a resultar em variedades com melhor produtividade, adaptadas ao contexto de mudanças climáticas e com melhores características nutricionais, sensoriais e de pós-colheita. Esta revisão bibliográfica teve como objetivo apresentar e discutir resultados da literatura sobre a qualidade pós-colheita em hortaliças biofortificadas. Os procedimentos metodológicos tiveram como base a Revisão de Literatura, cujo levantamento das publicações mais relevantes acerca do assunto ocorreu através de artigos publicados em periódicos, dissertações, teses, livros, anais de congresso e monografias disponíveis em bases de dados como a Embrapa, Google Acadêmico e repositórios acadêmicos institucionais. Concluiu-se que os estudos que visam determinar o desempenho e a qualidade em hortaliças biofortificadas na pós-colheita são importantes visando a combinação dos caracteres de produtividade, qualidade nutricional, alta durabilidade e sustentabilidade.
