Parasitological and microbiological evaluation of strawberries sold in street markets and supermarkets

Resumo: Objective: to evaluate the parasitological and microbiological quality of strawberries sold in a municipality in the state of Bahia. Method: cross-sectional study, where parasitological and microbiological analyses were carried out on strawberry samples from four commercial points in Santo Antônio de Jesus, Bahia, Brazil, with convenience collection, in the years 2015 and 2016. Results: the strawberries were contaminated by parasites, filamentous fungi, and yeasts. Nematode eggs, cysts of Giardia spp, Endolimax nana, Entamoeba coli and free-living protozoa were found in the analyzed samples. Populations of total coliforms and Escherichia coli (<1 log CFU/g) and filamentous fungi and yeasts (>4.17 log CFU/g) were found. Conclusion: Considering the high population of filamentous fungi and yeasts and the finding of parasites in the analyzed strawberry samples, it is essential to adopt hygienic practices from farm to table, aiming to prevent diseases caused by agents that are transmitted through food and guarantee consumer health, highlighting the importance of investigating fresh organic products sold to establish more rigorous quality control strategies.

Método: estudio transversal, donde se realizaron análisis parasitológicos y microbiológicos en muestras de fresa de cuatro puntos comerciales de Santo Antônio de Jesus, Bahía, Brasil, con recolección por conveniencia, en los años 2015 y 2016. Resultados: las fresas estaban contaminadas por parásitos, hongos filamentosos y levaduras. Se encontraron huevos de nematodos, quistes de Giardia spp, Endolimax nana, Entamoeba coli y protozoos de vida libre en las muestras analizadas. Se constataron poblaciones de coliformes totales y Escherichia coli (<1 log CFU/g) y de hongos filamentosos y levaduras (>4,17 log CFU/g). Conclusión: Considerando la elevada población de hongos filamentosos y levaduras y el hallazgo de parásitos en las muestras de fresa analizadas, es fundamental adoptar prácticas higiénicas desde la granja hasta la mesa, con el objetivo de prevenir enfermedades causadas por agentes que se transmiten a través de los alimentos y garantizar la salud del consumidor, señalando la importancia de investigar los productos orgánicos frescos comercializados para establecer estrategias de control de calidad más rigurosas.Objetivo: avaliar a qualidade parasitológica e microbiológica de morangos comercializados em um município do estado da Bahia. Método: estudo transversal e descritivo, onde foram realizadas análises parasitológicas e microbiológicas em amostras de morangos de quatro pontos comerciais de Santo Antônio de Jesus, Bahia, Brasil, com coleta por conveniência, nos anos de 2015 e 2016. Resultados: os morangos apresentaram contaminação por parasitos, fungos filamentosos e leveduras. Encontraram-se ovos de nematodas, cistos de Giardia spp, Endolimax nana, Entamoeba coli e de protozoários de vida livre nas amostras analisadas. Foram constatadas populações de coliformes totais e Escherichia coli (<1 log UFC/g) e de fungos filamentosos e leveduras (>4,17 log UFC/g).
