Resumo: This article is part of a more extensive study investigating slavery in the cocoa economy of Ilhéus, southern Bahia, between 1850 and 1888. In this case study, we analyze the importance of cane brandy (cachaça) based on the Municipal House Tax Collection Book, which covers the period from 1870 to 1878. The complementary sources used are post-mortem inventories:  Journal of Notary Acts, Slave Classification Book to be released by the emancipation fund, and the General Census of the Empire of Brazil of 1872. The investigations concentrate mainly on the volume of exports, taxes collected by the Chamber, slave labor and on the agents involved in the business.

Durante este período, la economía local se desarrolló con la expansión de los ingenios azucareros y el cultivo de cacao, entre otras actividades económicas. Nuestra propuesta es investigar la cachaza y la esclavitud en este contexto, las principales fuentes son inventarios post mortem, libros de recaudación de impuestos, libro de clasificación de esclavos, censo de Brasil (1872) e informes de viajeros extranjeros. Los objetivos son analizar el mundo del trabajo de las personas esclavizadas involucradas en la producción de la bebida, así como de las exportaciones y los exportadores del destilado y la importancia económica y social del producto.Esse artigo analisa o trabalho escravo e a produção de aguardente de cana em Ilhéus, sul da Bahia, entre 1850 e 1888. Nesse período a economia da localidade se desenvolveu com a expansão dos engenhos de açúcar e o cultivo do cacau, entre outras atividades econômicas. Nossa proposta é investigar a cachaça e a escravidão nesse contexto, as fontes principais são inventários post mortem, Livros de cobrança de impostos, Livro de classificação dos escravos, Recenseamento do Brasil (1872) e relatos de viajantes estrangeiros.
