ASSESMENT OF THE COMMERCIAL VIABILITY OF THE TAMBAQUI Colossoma macropomum (CUVIER, 1818) OF 1.10 ± 0.10 KG AND THE YIELD OF ITS “FLATTED CUT”

Resumo: In fish farming, obtaining the cost of production and its income is important for the fish farmer to take assertive measures, for greater profits. In this sense, the aimed of this study was to evaluate the commercial viability of producing of tambaqui (Colossoma macropomum) to 1.10 ± 0.10 kg and the yield of its flatted cut. The production cost was calculated through data survey. The cost of sale was carried out through a price survey with commercial consulting companies and fish farmers associations in Rondônia state, Brazil. Yield data were collected from 40 fish weighing 1.10 ± 0.1 kg. The Shapiro-Wilk and Levene tests (α=0.05) were applied. Then, the Kruskal-Wallis and post-hoc tests (α=0.05) were applied R$ 3.67/kg is spent to produce the tambaqui to 1.10 ± 0.1 kg and its selling price by the producer is on average R$ 5.00/kg, representing a profit margin of R$ 1.33/kg. However, as for the yield of the flatted cut, it presented 51.1 % of residues and 22.0 % of carcass yield, this lower value from those obtained for other weight classes. Although the cultivation to 1.10 ± 0.1 kg tambaqui presents a high production cost, it presents positive economic viability both for the producer and for the processing industry. However, flatted cutting is a new market niche, and for this reason, its production technology is still not fully mastered, which tends to have a direct impact on yield. Nesse sentido, o objetivo deste estudo foi avaliar a viabilidade comercial da produção do tambaqui (Colossoma macropomum) de 1,10 ± 0,10 kg e o rendimento do seu corte espalmado. O custo de produção foi auferido através de levantamento dados. O custo de venda foi realizado através de uma pesquisa de preços, junto às empresas de consultoria comercial e associações de criadores de peixes em Rondônia, Brasil. Foram coletados dados de rendimento de 40 peixes com pesos de 1,10 ± 0,1 kg. Foram aplicados os testes de Shapiro-Wilk e Levene (α=0,05). Em seguida, foram aplicados os testes Kruskal-Wallis e post-hoc (α=0,05). São gastos R$ 3,67/kg para produzir o tambaqui de 1,10 ± 0,1 kg e o seu preço de venda pelo produtor é em média R$ 5,00/kg, representando uma margem de lucro de R$ 1,33/kg. Quanto ao rendimento do tambaqui espalmado, apresentou 51,1 % de resíduos e 22,0 % de rendimento de carcaça, valor este inferir aos obtidos para outras classes de peso. Embora o cultivo de tambaqui de 1,10 ± 0,1 kg apresente custo de produção elevado, apresenta viabilidade econômica positiva tanto para o produtor como para a indústria de processamento de pescado. No entanto, o tambaqui espalmado é um novo nicho de mercado, por isso ainda não se tem o total domínio da sua tecnologia de produção, o que tende de impactar diretamente no rendimento.
